  1. Well, I made a batch today and used the Spectrum Organic Shortening. They came out exactly the same as the ones I made with Crisco. Just thought I'd update
  2. T--I wish I could help here, but I just have no experience with these things. I want to say that I'm thinking about you and Megan, and praying that you find the answer to her feeding problems. I can't even imagine the stress that all of this puts on you, physically and mentally. Bless both of you
  3. I have funny-sensitive skin. I can wear 14k gold jewlery, but sometimes the white gold will irritate--I figure it must be the added nickel. Some sterling is fine--some is not. A non-latex band-aid will put a mark on my skin that will last for weeks--literaly. I have to be very careful of what I use on my face--I'm very sensitive there.
  4. Well now--that is the best explanation of this that I've ever heard! And I'm going with it Tell your Mom thanks--I smiled, too, when I read that. Coming from someone who has been at this for 12 years, that really hits home. Maybe leaky gut does not always heal--and we just have to eat this way forever. I was reading about lectins the...
  5. My GP said basicly the same thing--she said that that symptom by itself (no other heart symptoms or dizziness) is nothing to worry about. I still think that it means something, especially since it started after the gluten-free diet--but my GP dosen't even pretend to know anything about Celiac. Also, 2 1/2 years ago, I had an echocardiogram and spent 24...
  6. I have to ask--did eating this gluten food cause you any discomfort at the beginning? I've been wondering lately how I'd react to an actual serving of gluten, as opposed to the CC that normally causes the reaction for me. Like, when you ate the first thing this weekend, did you get sick at first, or not at all? Just nosy!
  7. I've had a couple of instances where it was very fast--and those were when I first got into bed, too. The usual palpitations that I get during the day are sort of like I'm anxious--but I'm not! I don't think. Sometimes, I can stop it with a deep breath--most times, not. Do you have any idea what could trigger these things?
  8. Rachel--I react to tapioca the same as gluten! I made cookies the other day using only potato starch. No grain flours at all. I don't know if you can tolerate that, but they came out pretty good. That's interesting about the heartbeat--I get palpitations, since I've been off gluten. Not a rapid heartbeat, but I'm aware of my heart beating. I would love...
  9. You're not a weenie ! The endo. was no big deal at all for me. I was asleep for the whole thing--I don't even remember anything after the IV went in. (When they put the IV in, just don't look!) I woke up feeling fine--not groggy or nauseous or anything. I sat and had a little apple juice, got dressed, and was able to leave. Really, nothing to worry...
  10. Hi Monica and Floridian--I'm so sorry you are feeling so bad right now Julie--I also saw a Kiniesiologist when I was still trying to find an answer to why I was always sick. It's interesting that the things he told me I was "allergic" to (they use the word, allergic, I think for all kinds of intolerance) are either things that I know are a problem...
  11. Good to know--that "o" always throws me a little!
  12. Chelsea--I think you have a valid point. If you are not comfortable about this, then you should definately go for the re-testing. For the record, I have also heard the 3 slices of bread a day for 3 months. This is just my opinion, but since you've been so completely gluten-free for several months now, I would try to go even a bit longer than that, if you...
  13. That's not a weird question at all--I've been wanting to ask the same thing!! It seems that, just like you, all of my energy and thought go into figuring out what is causing what. I have been gluten-free for almost a whole year, and while some things have actually resolved (anemia, depression, skin stuff) I still have GI issues and anxiety that will go...
  14. I use Pam, and the GFP cake has come out of the pan fine each time. Parchment paper is a good idea, though--just to make sure.
  15. Yes! I made chocloate. I made it in the machine in the afternoon, and put it right into a plastic container and into the freezer. By the time I had some last night, it had frozen and was very good. I thought it tasted almost like a fudgesicle. I kind of threw together my own recipe--4 cups Vances, 1 cup sugar, 1/2 cup cocoa powder (Nestles Pure), 1 Tbsp...
  16. Oh Armetta--I'm SO glad they turned out well for you! I know what you mean about everybody else wanting to eat them on you--I'm like "you all can have anything else you want, I get these!" (Not really, I do share )
  17. I found them through trial and error. I did my own version (after seeking advice from my allergist) of an elimination diet. It took me about 6 months. I did look into having blood testing done for the intolerances, but in the end deceided not to.
  18. Lister--with all the hand washing you've no doubt been doing lately, you most likely have very dry skin on your hands that is cracking. Get some gluten-free hand cream or moisturizer, and use it whenever you wash up and before bed
  19. I love this thread--I have so much in common with you all! I believe, truly, that I have a leaky gut. When I went gluten-free last June, I felt better than I had in years--for about 3 months. Then it seems that everything started to bother me. I have been reading everything I could get my hands on about lectins, grain intolerance, and food intolerance...
  20. The Ener-g product that I buy is also called "Potato Starch Flour". Really confused me at first!
  21. Hi Cheri --The next time I make these, I would rather use Spectrum than Crisco--what do you think? I have always found that using butter or margarine make my cookies too flat and crunchy. Not bad, but I just prefer chewy.
  22. Hi Liz--I used the potato starch recipe because I can't tolerate grains, period, anymore. That's why I was so happy to see that recipe that used no grains at all. The potato starch is so fine and soft, that if I could use a regular gluten-free flour or a mixture, I would. But I plan on making them again this way since mine came out fine. Hey Judy...
  23. Cool!! We'll have to compare notes tomorrow
  24. Hi Terps--I didn't feel well at all when I first went gluten-free. I had been sick for years, and for the first 3 months gluten-free I felt tired, foggy, stomach issues--pretty much like a wet dishrag! Around the 4th month, I seemed to turn a corner. I'm almost at the 1 year point, and having worked through my additional intolerances, am just now feeling...
  25. I know how you feel, Turtle! It's always something ! But if you have TMJ Disorder, it is easily dealt with. The only time I have any mild pain at all now is if I don't wear my mouth guard for a while. Kind of a "gentle reminder". Enjoy that pizza
