  1. I didn't react to soy in the scratch test, either. But I can not tolerate soy. Makes me bloat, and gives me terrible cramping, gas and D. I can do soy oil and lecithan in relatively small amounts. I believe that's because the proteins are not in the oil.   4. Self rising flour is flour with salt and baking powder already added. If you substitute plain flour for self rising, you have to add, I think, 1 1/4 tsp. of baking powder and a pinch or so of salt for each cup of plain flour.

  7. I make my own. I put a tsp. each of sugar and Nestle Pure Cocoa Powder in a cup. Stir in Vance's Dari Free and microwave 2 minutes. Stir well. This would work with whatever kind of milk you like.
  8. Utz potato chips made me very sick recently. I began to feel it 2 hours after I ate them.. I was sick for over a week. Not back to normal for a while after that. They say gluten-free on the bag, their website says they can't guarantee it. I emailed them, was very nice about it, and never heard back.

    Megan--The list your doctor gave you is hopelessly outdated. I got a similar one from mine . Like Chelsea said, there are many things that you can have. Kraft is a wonderful company and will clearly list any gluten ingredients. All you have to do is read their labels. Con Agra Foods and Nestle will do the same. As will Hershey.   11. Metal/stainless steel cookware is fine--just make sure you scrub it out thoroughly. It's best to replace any non stick pans if they are scratched. Other things to replace--collander, toaster (get one to use for gluten-free breads only), wooden cutting boards and utensils, cast iron pans that have been used to prepare gluten foods.   12. I just love the idea for us all (as many that can) to get together for a weekend and visit face to face. If it were at all possible, I would be there. I think it would be great!
  13. You would use Crisco 1 for 1 to sub for butter. What do you mean by non stick baking? Oh--you mean to grease the pan? (I'm a little slow on the uptake ) Yea, just straight substitute the Crisco for the butter. Another thing about using Crisco vs. butter--the cookies come out chewier, and not so flat.
  14. When I called Nestle, the woman I spoke to was very nice and seemed to know her stuff. I was asking about the pure, unsweetened cocoa powder. She said that they clearly mark the packages for the presense of gluten. She also said that they label for cross contamination, too.
  15. If you don't mind soy, you can use Crisco. The butter-flavored sticks are great for cookies. For a soy-free alternative, Spectrum makes a solid shortening. I have found it at Whole Foods.

  18. My doctor did mention to me after my colonoscopy/endoscopy that he took a biopsy sample for microscopic colitis. I had never heard of it before.
  19. Betty--why not try a salad for lunch? Unless you can't tolerate raw, I get the lettuce and veggie salad already in the bag. Add more veggies, or not, pour into a bowl, add dressing and eat. Also, a banana or some other fruit and a Lara bar make a decent quick breakfast. Your body will have a herder time healing if you don't stay nourished.
  20. I have the same issues with herbal teas as Debmidge. I know it's not a gluten reaction, but I get stomach distress from most of them, too. I also have allergies (no foods) so I'm sure it's some sort of an allergic response.

  22. Really, don't go back to that GI. I've said it before, but I have to say that I think a lot of these doctors are trying not to diagnose Celiac. There just does not seem to be any other explaination for it. You have had a positive result, and strong family history--not to mention your symptoms. My symptoms took a jump after I had my second child, also...

  24. Hi Ectobia--Welcome! Looks to me like you have some symptoms that could point to a gluten intolerance. If you feel like you want a diagnosis, I would suggest you make an appt. with a gastroenterologist. One that already treats patients with Celiac would be best, if you can find one. Do not go off gluten if you wish to be tested--it will affect the results...
