you won't hurt the flour by being more conservative and storing it more conservatively (colder), so yeah, go ahead and store it in the fridge. -

high fat ones (nut flours, flax meal, etc) go in the freezer. medium fat content ones go in the fridge (or ought to... I don't always, but my house doesn't get very warm). low fat content ones stay in a cool pantry. it's all about keeping the fat from going rancid. did your muffins have the requisite fat component in them (oil/butter)? -

Yeah... it frustrates me that so many people are unaware of even the macronutrient proportions of their diet - or haven't been taught about the long term ramifications of 'carbo-loading'. Yep, I broke my ankle on rollerblades (going to pay my phone bill!) sophmore year, and had to drop two classes and take a minimum load, and my grades suffered for that. ALWAYS read the ingredients. While you ought to be able to follow that rule, we've had a handful of cases where companies were incorrect in their labels. ALWAYS read ingredient lists. -
Eh... it's alright. Nothing specifically wrong, just very standard medical "vaguely helpful" speak. :-/ (I'm never impressed by the stuff they hand out...) I also dislike the heavy discouragement of fats, particularly without *quantifying* what they heck they mean by "low" fat. "Low" in comparison to WHAT?! I believe that dawn is made by unilever, which means that they would clearly label any gluten, not hiding anything. When in doubt, call the phone number for the company. -

buckwheat, itself, is gluten free. often buckwheat is mixed with wheat for pancakes and the like, but buckwheat is actually a fruit, and gluten free. -
figureing out what to get rid of - a lot of online research and listening to my body. it really was *literally* twelve foods for two weeks, including salt and olive oil. I don't remember the sites I found, or what else I "allowed" myself (I know that pepper was out, and only one fruit was in).

This is why we ALWAYS check the ingredient label on ANYTHING that has an ingredient label. (And always look for one on anything that isn't a whole food/produce.) -

One of the parents has to have one of the genes - and not all of the genes have yet to be identified. -
Neither - barley can be hidden in 'natural flavors', doesn't have to go on the 'may contain' line (which I think is optional anyway), and doesn't have to be listed at all. The allergen labeling law was for the eight major food allergens, and barley is not one of them. They are wheat, dairy, tree nuts, peanuts, fish, shellfish, eggs, and soy.

Unless you want to get sick often, or never eat out, you have to be more assertive, to the point of saying, in that case, "Please take this card back and have the chef read it again, because it is obvious from this plate that he did not. This will make me very sick, and could have been easily avoided had he simply read the card." You don't have to say it... -

ditto what nini said - the two known genes cover about 95% of current biopsy-diagnosed celiac cases, not all celiac cases in the world. you can still have celiac, or just be gluten intoleranct. follow your gut, pun intended. :-) -

if it's a non-stick surface, absolutely do NOT scrub it with a metal scouring pad, or most scouring pads. you will only ruin it entirely and have to chuck the whole thing anyway. -

I don't know what the surfaces of those grills are like. if it's a non-stick surface, and you've used metal utensils on it (you're not supposed to use metal utensiles on non-stick cookware ), it may have problem scratches on it. you have to use your own best judgement about the shape it's in and how it's been used. in many cases, you would need to replace... -

I just found those today at Whole Foods. A bit spicy (I love spicy), and quite good. (My husband thought they tasted like spicy hot dogs. :-) ) -
it may have been too many carbs between the corn and potatoes for the chicken to "ameliorate". I'd have no more than once seriving of rice (one level cup - less than you'd think if you measure it before putting on a plate) with a chicken breast, particularly one cooked without fat.

I think sitting fifteen families down - briefly - and letting them know is VITAL. Someone allergic to peanuts (anaphlactic allergy) would do the same, and this is really a serious issue as well. You're not putting them out, you're just letting them know something important.
