I mean no offense, but you are making this hard on yourself. Yeah , finding food when out is tough - so bring your own darn food. Sandwhiches are not the only packed lunch one can make. But you can have migraines independent of gluten intolerance. You can have asthma independent of gluten intolerance. You can have fibro independent of gluten intolerance. Abdominal weight carrying patterns too. You can have any ofthese without a food intolerance at all. Yes, they could be related, so it's worth checking, but it doesn't have to be. -

good luck! gluten intolerance isn't the only thing that can give you headaches. I developed chronic migraines AFTER going gluten free. -
Diarrhea is "common" with celiac, but constipation is also not uncommon. Too many doctors don't know that diarrhea is not only a "primary presenting symptom" (just like being underweight isn't) but also not nearly as frequent as they believe.

I've used it on a pizza. I also thought it was salty, but fine. I'd use it again, and I think pasta would be a particularly good fit.

While I don't necessarily need my husband to brush his teeth first, if he's eaten something with gluten recently (in the past half hour or so), he'll stop me before I kiss him and warn me he's been eating gluten. So, no, it's not totally crazy. No warning needing for random hugs, though. -

You've been gluten free for a couple months, there is no reason to expect blood testing to be accurate. As noted, you need to be eating plenty of gluten (~3 slices of bread a day, or the equivalent) for quite a while (3 months). -

I don't add xanthum gum to my muffins (they aren't crumbly, but they aren't free of crumbs ) but your mileage may vary on whether or not you need to add the gum depending on the recipe. you might consider finding a doctor outside of your city. yes, two hour drives to see a doctor are nothing short of inconvenient, but sometimes necessary. (I just use two hours as an example because that's how far away one of my doctors was - 90 miles each way.)

Those symptoms sound like fairly classic lactose intolerance symptoms. You can certainly give lactaid a try (you may need a larger or smaller dose, depending on how severe your lactose intolerance is).

If you have an issue with casein (milk protein) or lactose (milk sugar), then it could (probably more casein than lactose, due to the mechanism of intolerance). If you don't, I don't see any reason why it would.
