  7. It is very difficult at first. But it's creating a new habit, and that's hard. Don't let the task deter you! Wheat, barley, and rye are out. Oats are questionable - you have to figure out for yourself. But everything else is fine. Packaged products are tricky, but there's a whole host of whole foods that are naturally gluten free.

  16. not everyone likes the taste of bean flour - some people find it far too strong. there are a lot of different tastes in the gluten-free world. you can't try one type of bread, say "eww, all gluten-free bread sucks". there's a HUGE variety, and you have to experiment to find out what YOUR tastebuds like.

  19. no dairy products can be certain to have *NO* lactose. if you want to do a test, eat something low lactose (harder cheeses or yogurt) WITH lactaid. if you find you have some variety of reaction, it's almost certainly from the casein.
