  8. Don't think you have to give up baking bread for a living if you test positive. You just will have to avoid baking bread with wheat/barley/rye/oat flours. But there are many other flours out there....and there are soooo many people looking for good non-gluten bread.   11. I got my(malabsorption) quantitative microscopic fecal fat score back: normal is under 300 units, my score was 976. I make all my own food, and adhere to a strict gluten-free diet, so this can't be caused by gluten ingestion. The literature says this score could also be caused by consuming casein (anti-casein antibody test came out positive.)...

  13. I'll go against the grain here and say that if you have access to the testing, go ahead and get it done. It can rule out other problems that may be going on. Even if the testing comes up inconclusive or not very helpful in the celiac department, the testing will give you a nice set of baseline numbers that might come in handy down the road.
  14. If you're not sure if you are being gluten-free, post one day's food menu here, complete with brand name of product and ask if these products are safe. Two heads are better than one! Also, be sure that you are not letting gluten-containing foods touch your foods. Are you using your own special toaster? Do you have your own butter that nobody else touches...
  15. Here's an easy way: keep a food diary for a week. Write down everything you eat, and break it down into its food components. For example, instead of writing down chicken soup, write the ingredients: chicken, celery, onion, salt, pepper, etc. Then write down how you feel after you eat.     Don't know if this is worth a shot...is there any way you could go out of province? They could probably take you right away. I don't know exactly how it works, but if your doctor says you need to be seen fast, and they can't give you a quick appointment in your hometown, then I'm pretty sure they have to pay for you to see someone out of town/out of province...
  20. the lo-fat cocoa could also be suspect. Since it has been modified, it is worth checking out.
  21. Are your rice crackers and rice cakes labelled as gluten-free? If not, maybe call up the company to make sure. Also, if they are flavored...they might have gluten in them.
  22. If the sodium is coming from a flavouring compound, then there is a chance that it could contain gluten.
  23. Many brands of canned fish that feature vegetable broth do not list the ingredients of the broth. Some of these vegetable broths can contain wheat starch in the flavouring (at least they can up here in Canada). Anyways, I think it is always worth a simple phone call.
  24. I don't get headaches from drinking other brands of camomile (like Celestial Seasonings! yum) I am not an expert in labelling, nor in food ingredients. So I sent my question (and Tetley's bizarre answer) to the Canadian Food Inspection Agency. They were VERY interested in this situation.
  25. Are you reacting to fresh tuna and fresh salmon? Or are you eating the canned stuff. Most brands of canned tuna and salmon (and other canned fish) are not gluten-free...be sure to check with the manufacturer on the brand you are eating. I had to learn this the hard way.
