Char, some people have tried deducting their foods, and found it wasn't worth the time and effort. You can only claim the difference between what regular food costs, and what gluten-free food is. So, then for every loaf of bread, every pack of cookies, every pizza, you'd have to go and find the prize of the normal item, and deduct it from what you paid for... -

Kelly, just be aware that most doctors still mistakenly believe that milk and soy are healthy, and that most people are fine with it. Which is a far cry from the truth. Jerry, maybe you are not getting enough fat. Your body absolutely needs enough saturated fat. The fat to avoid like the plague it is, is hydrogenated fat, and partially hydrogenated fat (trans fat). Hi Kelly, and welcome to this board. It sounds to me that, rather than being glutened, he might be intolerant to dairy as well. A lot of people with celiac disease can't tolerate dairy or soy either. Well, obviously your doctors don't know what the heck they're talking about. Your Enterolab results clearly show that you have the celiac disease genes, are intolerant to gluten, have malabsorption due to villi damage (meaning, you have celiac disease), are intolerant to dairy and soy. Meaning, you need to eliminate gluten, all dairy and soy for life....

Here are my thoughts: I don't believe that your dairy intolerance can be gone this quickly, it usually takes much longer. Your symptoms are quite typical of dairy intolerance. I also felt a ton better within two weeks of starting the gluten-free diet (and after a couple of weeks I eliminated all the other lectins besides gluten as well). All my aches... -

Those blood tests are quite unreliable. Many here had negative blood tests, and even negative biopsies (these are known for false negatives, too) and had positive tests with Enterolab, and a very positive diet response. Geoff, with eating gluten light for quite a while, and gluten-free for over a month might cause you to have a false negative biopsy. Eating lots of gluten for one week won't change that fact. So, don't be surprised if your doctor claims you definitely don't have celiac disease. It will be pretty useless to eat lots of gluten now, and will make you sick... -
