  4. I am sorry you're feeling bad. I would replace the cornstarch with a mixture of tapioca and arrowroot flour. I think that would work well. You could also put some potato starch in. Experiment until it comes out right.

  7. Liz is right, and you have an excellent doctor, to actually suggest trying the diet, even if your test results are negative. He understands that gluten intolerance doesn't always result in 'classic' celiac disease, and that the testing can only rule in gluten intolerance/celiac disease, but it can't rule it out. Also, maybe your villi aren't damaged enough...
  8. Have you found out and replaced any personal care products she uses that are containing gluten? It could be something with wheat germ oil, barley extract, oat bran........ like bubble bath, toothpaste, shampoo, conditioner, lip balm, lotion etc. Vitamin E can be derived from wheat germ oil. So, a multi-vitamin could contain gluten in the vitamin E. Or lotion...
  9. The absolute best oil for cooking at high temperatures, as well as being extremely nutritious, is coconut oil (and of course, it's gluten-free as well). Just make sure it is non-hydrogenated and cold pressed. The best place to find it is in a health food store.
  10. Since you already had a biopsy, you may want to go and get the celiac disease panel bloodwork done, and then go ahead and try the gluten-free diet. Or skip the bloodwork and just try the diet. Patti, if I eat rice or eggs especially (or gluten), my knees and ankles will give out on me, and I have to make sure I hold onto the handrail when going down the stairs, as I am afraid of falling. My wrists won't work then, either, and I can't lift anything heavy, because they will give out, too.
  18. Yes, both could be caused by celiac disease. Hair loss can be caused by it as well. But both hair loss and being scatterbrained can also be due to low thyroid levels.   20. Sandy, Carla is right, it could be Lyme disease. You also might have other intolerances. Rice, eggs and soy (plus dairy, but you've eliminated that already) cause almost the same symptoms as gluten for me, with diarrhea, stomach cramps etc. But they also cause joint pain.   24. I agree, that was my first thought when reading your post, that it might be the cheese. Or the eggs. Meaning, you really need to try an elimination diet to figure this out.   25. Brian is right. It is common for people with celiac disease to have a more noticeable reaction to gluten after being gluten-free for a while. I am purposely not saying 'more severe' reaction, because you had one very long, chronic reaction before, and so wouldn't notice the reaction to a single glutening.
