It's hard for people to comprehend cross contamination. I've demonstrated how easy it can be. Bowls of water lined up, labeled different things. Like "gluten-free soup" and "gluten-free sauce" and so on. I take a small piece of gluten-free bread, and we pretend it's bread with gluten. I drop it in the pretend soup, and the bread dissolves. Pamelas baking mix is another good one for gluten-free pancakes. I'm very strict about my kitchen. I've replaced everything that could be contaminated from past use. The only gluten containing food allowed to be cooked are microwave items. Keeps me healthy and my kitchen not contaminated.

I'm the only celiac in my house. However, I only cook gluten-free. My husband and grandson eat gluten-free with me. I allow a few gluten-free snacks for the child, but they're kept in a bin on the lowest shelf off the pantry. He's old enough to be able to be responsible for clean up. We love fish. Salmon is a favorite. We have a couple ways we fix it. One is very simple with some lemon juice, butter and garlic powder. We have a Cuisinart grill very similar to a Foreman. I am in the US. A small rural area, with limited medical services. It took 3 months to get an appointment with a GI locally. Then another 3 months to schedule an endoscopy. It's a nightmare.

Wow. Not at the 2 weeks part, because around here it takes months to get an appointment with anyone for anything. I see a nurse practitioner regularly, and I must say that mine is a lot more knowledgeable. She's given me a lot of resources and talked about probiotics with me, and made suggestions to me. She even reads things I bring her and thanks me...

My education has been books, this site, a few other sites and other people I know with Celiac. I live in a pretty rural area with a teeny hospital. There's not a nutritionist who works with celiac disease within a couple hours of me. If you have access to a nutritionist who can help? I'd go for it. Knowledge is power, and the more you know the easier...

I am 60 and was diagnosed just this year. I was so sick that I immediately cleaned out my entire pantry. Donated any foods with gluten. Got a new toaster. Threw away all my wooden spoons, etc. etc. I was terrified to eat any gluten, because all accidental gluten exposure made me extremely ill. Thanks for the link. I looked at the two cans I still have of the Hunt's Fire Roasted tomatoes. One has garlic and one does not. Neither can says "gluten free" on them. I don't know what to think ... other than I don't think I'll use them and donate them to the local food pantry. I only know they're the only thing new I used in cooking in the past... -

There are different kinds of yeast - like brewer's yeast which is a by-product of brewing. This just says "yeast". Very vague. -
