Yeah my facility is not large enough nor does it meet the criteria. >.< Major issue is while my kitchen is all stainless counters, and NTF styled with commercial ware the fact I live in the same building and use the kitchen for personal use prevents me from using it for commercial sales, I would also need to upgrade with a new bakers oven for more production... -

Try keeping a food diary for now, and recording what food are giving you the heartburn, See about rotating foods and removing certain spices, seasons, and staples from your diet for a few weeks at a time. I wish you luck and that you get the endoscope soon, keep on the gluten diet for now til you get the testing done. The constipation is normally caused by a magnesium deficiency. Umm I still have to take insane amounts of magnesium, I take a powdered version in a drink, Natural Vitality Calm, I learned it was best to spread my doses out, I used to use a tsp, but I changed to a scale and measure to the gram. Yeah, that is one of the major signs, I mean your body is not absorbing food, B-vitamins, magnesium, iron, etc. are being hampered during a exposure, your dumping your guts out to the porclain gods and not getting what your need from what you eat. 4 of the wholefoods I visit in the area all have them, they also have that miyoko I was talking about. Yeah I did some checking daiya changed recipe, they now make a new style that is for pizza called cutting board that is more stretchy/melt. It comes in Mozzarella, cheddar, and pepper jack. I think the meds might be causing it...PS if you want to get over it faster...avoid fever reducers unless you go over 102F. The fever is how you body kills the virus stopping is preventing your body from fighting it. Look up elderberry syrup, Echinacea, and take it with plenty of liquids, vitamin C, and zinc. Out of curiosity I did the same at 2 whole foods and a natural grocers down here, only the new one....side note I found the only store bought bread I can stomach in stock. They actually carry Julian Bakery Paleo Bread now...starch free, gum free....I was tempted to get one of the almond ones again since I can make the coconut one in my own bakery. -

Flavor probably,,,texture no. The thing that gives non dairy cheese that stretchy melty goodness is normally tapioca starch. When I make non dairy cheese at home, and I used to want it super stretchy I added tapioca starch. MY gut is iffy with the stuff now days and not made my super stretchy cheese in awhile. The Leaf Cuisine does not contain any starches... -

The above from tessa is some good info, but do recall you will have to do a gluten challenge first, this involves eating gluten daily for 12 weeks about 1/2 a slice of bread a day at least. If you want to make sure it is a GLUTEN issue and not some other ingredient we have had members use vital wheat gluten and wheat germ by the tsp daily for the challenge... -

For it me used to be a combo deal, I was constipated for days over a week constantly....that packs up, and the rotting fermenting food can cause a inflammatory effect and water retention in addition.
