  1. Here's my recipe for Pelmini dough. I think Pelmini and Pierogi are the same thing, basically. This isn't perfect, but my kids, even the gluten eating ones, eat them up. We stuff ours with ground turkey, finely chopped onion, salt and pepper. I have also made them and frozen them before boiling. They're really easy to pull out of the freezer and make...
  2. Hi everyone, I've been crazy-busy still since basketball season started. I've had a few "good" days where I've eaten less carbs and not eaten in the evenings, but most days I've eaten whatever is handy, whenever I feel like it. (Only gluten-free though, I NEVER cheat with that.) I have been exercising almost every day either at basketball practice or...
  3. Here is a recipe that I've used with great results. If you add in some sliced almonds they're very similar to Pamela's cookies. Molasses Cookies 2 C Brown Rice Flour 1/2 tsp xanthan gum 1/2 tsp ginger 3/4 tsp cinnamon 1/2 tsp salt 1 Tbs Ener-G Egg Replacer 1/4 C oil (Canola, melted coconut oil or butter- if using butter cut salt) 2/3 C Molasses...
  4. We use chocolate flavored Almond Breeze, heat it up and add a few drops of peppermint extract. All my kids love it - and only one of them is dairy free! The Almond Breeze does have soy lecithin in it, but it doesn't bother me at all and I am soy sensitive.
  5. Thanks for the responses everyone. It sounds like it isn't quite possible to make a living from this right now. As much as I love doing it, I have to work and earn some money. I guess I'll keep looking into it and keep doing what I'm doing as much as I'm able. Our local health food store owner is interested in having me teach a cooking class for parents...
  6. I agree with Blueeyedmanda. But the real reason I'm posting is because I have a really good recipe for cookie dough that doesn't have raw eggs in it - so "i_miss_cookie*dough" if you would like the recipe, let me know. (My 17 year old cousin who wouldn't eat anything gluten-free to save her life loves the cookie dough.)
  7. My son is double DQ3, subtype 7, (DQ7) also. His celiac panel came back negative, but he was having problems at school (ADD type issues) and horrible gas all the time and we tried the gluten-free diet anyway. It made a dramatic and immediate change in him! He's almost 2 years into it now and doing well. I have read some research (posted here somewhere...
  8. I'm not sure if this is in the right forum, so a moderator can move it if it fits better somewhere else. I have developed a growing passion for helping people to learn how to shop, cook and cope with Celiac, gluten intolerance and other food sensitivities. I love my "real" job (teaching PE, Health and coaching basketball), but I'm becoming more and more...
  9. I'm not a Jehovah's Witness, but I wanted to welcome you to the board. There are lots of great people here who are very supportive, regardless of religious views. I hope you stick around so you can get some support and encouragement!
  10. I discovered that you can make chocolate chip cookie dough, roll it into balls and freeze them individually. Then bag them and you can bake any amount later. Of course, my kids seem to like to eat frozen cookie dough balls as much as the baked cookies! Bakingbarb - I know that you're somewhere in the Seattle area. Have you heard about the new bakery...
  11. I have 4 kids, so we eat a lot of kid-friendly, "normal" looking food. Dinners: Spaghetti and meatballs - Tinkyada pasta, homemade sauce (I think Prego is gluten-free) and turkey meatballs. Tacos - Hard corn tortillas, ground turkey seasoned with McCormick's seasoning, refried beans, olives, cheese, lettuce, salsa. Meatloaf - use a regular recipe and...
  12. I'm so sorry about your brother in law. I will pray for you and your family.
  13. I always make Thanksgiving dinner at home, so I can be sure of being gluten-free, but this year a really good friend invited us over and was totally willing to do it mostly gluten-free. I explained cross-contamination and everything to her again, just to be sure, and I know she got it because we've been close through this whole ordeal of mine. Anyway, everything...
  14. Welcome Harobed! It will be a bit slow on here until Monday, I think, but I wanted to welcome you to our thread.
  15. I'm assuming you just need to know a recipe for the dumpling part. This is what I use: 2 C gluten-free Flour* 1/3 C Butter or Spectrum Shortening 1 Tbs. Baking powder 1 tsp. salt (only if using shortening or unsalted butter) 3/4 - 1 C Milk (or rice milk...) Cut butter into flour and baking powder (and salt, if necessary) until it resembles coarse...
  16. Hey Cruelshoes and anyone else living in the Federal Way, Tacoma, Puyallup area - remember the kick-off support group meeting tonight! I'll be there at the last minute, hopefully not too sweaty. (I'll be coming straight from high school basketball practice.)
  17. Here is a link to 25 recipes that he can eat most of. There are a couple (peanut butter cookies and Puppy Chow) that call for peanut butter or nut butter, but I think the rest are nut free. They should all be soy free because I'm sensitive to soy too. It's hard at first, but it's doable. Can he have seeds? Like sunflower seed butter? If so, you can...
  18. My guess would be that a little more butter might help. My crust seems to stick together pretty well and I put a tad more butter or Spectrum Shortening than Julie does. I think that either freezing it or baking for 5-10 minutes would help it. Hi Mango! I hope you like the pumpkin dream pie! I just bought some TJ's Ginger Snaps so I could make...
  19. Yep, I use white rice flour in gravy and it turns out great!
  20. I use this mix of flour: 3 C brown rice flour, 1 C potato starch, 1/2 C tapioca starch and 2 tsp. xanthan gum. Sift together three times. Then I use it just as I would all-purpose flour in quick breads, cookies, cakes, etc. Sometimes I have to adjust the liquid a tiny bit, but usually it works just fine. When you start getting into trickier things like...
  21. I actually feel really great now. I have a type of kidney disease that goes through periods of remission and relapse (usually with large doses of medication) and doesn't cause serious damage for years. I've been steroid free for 3 years now and feel very healthy. I had a large list of health problems and all of them have cleared up except psoriasis, so...
  22. Here are a few that I posted on another thread. They are also egg-free. No Bake Pumpkin Pie Filling (no eggs, dairy or soy)(Double Recipe) 2-1/2 C Rice Milk 1-1/3 C Maple Syrup 1 tsp vanilla 3 envelopes unflavored Knox gelatin or equivalent 2 tsp. cinnamon 1/2 tsp ginger 1/2 tsp nutmeg 1/2 tsp salt 1-29 oz can pumpkin 1 prebaked pie crust...
  23. I agree with Raven. Don't be so quick to think there's a big difference. I believe that Celiac Disease is the only sub-category of gluten intolerance that they can actually test for, so doctors think that it's the only gluten associated problem. My kidneys seem to be damaged by gluten (as well as some digestive issues and other autoimmune problems), but...
  24. Hi all, Didn't do so great today. Got some exercise at basketball practice, but ate a bit too much. Ghirardeli (sp) dark chocolate mint things and 2 chocolate chip cookies were the worst thing. I'm exhausted - I haven't coached high school basketball for several years and I forgot how intense it was!
  25. I freeze them with parchment paper in between and then the kids toast them in the toaster for a quick breakfast.
