  2. Bean flours smell and taste gross until they are baked. Then, as long as they aren't too big a percentage of the flour, their yucky smell/taste goes away.   8. Soyco Foods makes a DF/gluten-free/SF alternative that works okay if there are a lot of seasonings. It's best to use it when you can let the flavors blend for several hours.
  9. I use Umboshi vinegar - it's really salty - and then add toasted sesame oil, ginger and garlic for flavor and leave soy out of all my stir-fries and Asian dishes. I've been off soy for 11 years and don't miss it any more.

  11. Missy's mom made a good suggestion that I'll second. Spectrum makes a great non-hydrogenated shortening that works well in baking. We can't/won't eat Crisco or any margarine and I won't eat hydrogenated oils. Try the Spectrum - it might be the perfect solution for you.

  13. Has your doctor done a simple urine test for protein? I had something similar and it turned out to be a kidney disease, even though my kidney function was 100%.   15. I did have mold on my Ener-G bread once. I think there was a hole in the package. I called the company and they sent me a new loaf. I've never had another problem and have been buying it for almost 11 years.

  22. Just wanted to chime in with my agreement. Cutting out ALL dairy, corn and soy, possibly eggs too, is a good way to start. It might seem like a hassle, but it's a lot better than feeling crummy.

  25. Lisa, I see that you have several food intolerances in addition to gluten. Are you completely off dairy, eggs, soy and the nightshade vegetables?
