  1. Thank you! I was so excited to see that this doesn't have eggs! We love to barbecue and I can't tell you how sick I am of hamburgers and hotdogs on Ener-G Brown Rice bread.

  6. It's a half cup or a quarter of a pound. If you get a pound of butter divided into 4 little blocks, each block is a cube.
  7. White rice flour might work well if you can use eggs and real milk, but it turns into a gooey mess if you have to substitute for those things too. I make a lot of baked goods with a mix of flours that absolutely won't work with just rice flour. Believe me when I say I wish it was just that simple for me.

  10. I had an ELISA panel done about 10 years ago and it was the best thing I ever did. It was accurate for me. Just avoiding gluten wouldn't have done the trick and I'm now pretty healthy. It would have taken too much time and effort to figure out all those foods on my own. I know there can be false positives, but I think it's worth doing.
  11. I would wait for at least 6 months, or better yet, a year. I waited for several years, and even now, try to stick with small amounts of raw goat cheese. Pasteurizing changes the protein structure (the casein) of the milk and makes it harder to digest, so raw products are better. But make sure you get them from a reputable source!
  12. In the fall I love to eat warm (must be homemade) applesauce on top of Yukon Gold mashed potatoes instead of gravy. Gotta have a little cinnamon in the applesauce.

  16. I use ground flax seeds for things that require "sticking together", like in meatloaf, and the egg replacer for things that need to puff up. In something like a cake, I use a combination of egg replacer and whipped gelatin.   17. They should taste fine, but if you're not careful they'll be gooey in the middle. A good flour or mix, plenty of egg-replacer and the right temperature on the griddle will all help. I keep the griddle a little lower than for regular pancakes and cook them a little longer. Make sure to not flip them too soon so they cook fully in the middle.
  18. Your cornbread should turn out great. It took me 9 years to get gluten-free, CF and egg-free pancakes to turn out well. Don't be hard on yourself if your first batch doesn't turn out the way you had envisioned it. Are you using a mix or making them from scratch?   20. Ener-G egg replacer is casein free. I've been using it for 10 years with no problems. Remember to add 1Tbs oil for each egg being replaced. I also use a little bit more of the egg replacer than it calls for.

  22. I'll second the motion for the Gluten Free Pantry Cake and cookie mix. I made cupcakes out of it for my son's birthday and no one noticed that it wasn't "normal" cake. And it's just as easy as any cake mix.
  23. Do you also have edema? Have you had any kidney tests done? A simple urine test can show if you are "spilling" protein through your urine, which would result in slightly low levels of albumin and total protein. This (along with elevated liver enzymes) can be a symptom of something called Nephrotic Syndrome. (High cholesterol is often a symptom too.) ...
