  2. I don't typically have intestinal symptoms, but I do have DH. I typically show my arm and when people see the visible scars they get it. But even then, I get the feeling that they just think "big deal, she gets a rash". After a year I am still not sure of myself when asked the question........

  6. My last attempt, I used tapioca, white rice, and brown rice breads, and as I said before, it was soggy and greasy....the bread did not absorb the liquid. So, I wonder if it was my technique? I would really appreciate it if someone would post a recipe that has been successful - but without cornbread - I never really liked cornbread stuffing. Thanks...

  8. Mellajane, I don't know, but I would assume the answer is "it depends" - just like everything else. Some brands are safe and some are not. I bought some white corn flour at Giant Eagle that is labeled gluten-free. I know this is not the same thing as corn meal......I used it to make corn muffins - recipe is right on the bag.   9. eKatherine - I never even thought of using rice instead of bread! It sounds really, really good. Fortunately for me, rice was one of my fave foods pre-gluten-free. I would still like to learn how to make it from bread crumbs. My mom's dressing was one of my fave foods at Thanksgiving dinner (second only to noodles) Any advice will be appreciated...

Last year, I made my own bread crumbs by drying out slices of 3 different kinds of gluten-free breads in the oven (I had 3 kinds because when first diagnosed I went crazy when I went to the health food store and bought one of everything).   13. Sweet Baby Ray's BBQ Sauce is AWESOME! I have not made sloppy joes for about a year now - I dont like any of the gluten-free breads so we just don't have sloppy joes any more.
  14. Every Christmas before going gluten-free, I always made peanut butter blossoms, which are just a small peanut butter cookie with a Hershey's Kiss pressed in the middle. I have also used the Reeses Miniature Peanut Butter cups instead of the Kisses. This Christmas I will be making these using the gluten-free PB cookie recipe.

I am about 2 hours from Columbus - that is where my GI doc is.   19. Mike, You are exactly right. I always use AirBake cookie sheets which take a little longer than the recipe cooking time, but definitely yields a better cookie. Tracy
  20. The Paula Deen recipe looks like a normal peanut butter cookie (at least like any peanut butter cookie that I have ever had). My teenage boys that do not like gluten-free alternatives, love them more than 'normal' ones. The cookies are pretty rich though - you just need to drink plenty of milk with them!

  23. I use the Food Network website (www.foodnetwork.com). I find many things there that are easily adaptable. I never thought I would see the day when my laptop is sitting on the kitchen counter in place of a cookbook.
