  1. We have used this one before - I found this one on FoodNetwork.com - courtesy of Paula Deen. 1 (8-ounce) package cream cheese, at room temperature 1/2 cup butter (1 stick), at room temperature 1 pound confectioners' sugar, sifted 1 teaspoon vanilla extract In a bowl, blend together the cream cheese and butter. Gradually add the confectioners...
  2. Cream Cheese Icing..........Yum! They might taste like pumpkin roll (or pumpkin log). Thanks for posting the recipe - I will try them out and I will frost them with cream cheese icing.
  3. Ha Ha! I know what you mean! When I had to switch from beer to something else, I made the mistake of drinking Jose Cuervo's Strawberry Margaritas. They go down waaaaaaaaaaaaay too easy and fast. It took me a while to figure out how to pace myself.
  4. What a great idea! This is basically the peanut butter cookie recipe that has been posted before, but with a twist. I have added Hershey's Kisses and Reese's PB Cups (miniatures) but never jelly. Maybe this will curb the PB&J sandwich cravings I have been having lately. Thanks!
  5. I was definitely not a beer snob before Celiac (Bud Light was my fave - enough said?). As much beer as I used to drink I could not afford to be one I am not a wine snob either - my favorite wine is Brietenbach Frost Fire made in the Amish Country in Walnut Grove, Ohio. It is not the cheapest wine on the market, but it is inexpensive and very sweet...
  6. Well, I just finished a Bards Tale beer, and I must say that it is pretty good! It has a stronger flavor than New Grist, but I like them both and am pleasantly surprised. I am going to have to get some more of both smuggled into West Virginia!
  7. Oh yeah - been there done that! I wish I could go too, but I have class Saturdays from 8 - noon.
  8. I have got to remember to take this info with me the next time I go to my GI in Columbus. I was just there a week ago and forgot all about your tips on Cameron Mitchell's restaurants, until we were on our way home. I usually just come home hungry from Columbus because I don't know the area very well. One time we did stop at Outback just off of 270. I...
  9. Beth, Everyone is different. I know - this is not the answer you were hoping for. Dapsone should help you immensely. It cleared up the worst of my DH symptoms in a few days (the gluten-free diet alone did not). It can take up to two years for the DH to go away (unless you are taking dapsone). So be patient and hang in there. It is tough at first...
  10. I am just finishing off my very first gluten-free beer. My bro brought me a 6 pack each of Bards Tale and New Grist. I have been staring at the bottles every day I open my fridge, trying to get my courage up to try them. I was so afraid of being disappointed.............I just couldn't bear it! I decided to try the New Grist first. This is for all...
  11. Both Claritin and Zyrtec have definitely helped me. I do not know what the source of my hives was, but I bet it is the Dapsone that I take for my DH. When I was a child, I used to get tiny little water-filled blisters on my elbows and knees that itched like crazy. This was typically only in the spring and fall, and our old family doctor chalked it up to...
  12. There have been many nights that a big bowl of cocoa pebbles with ice cold milk has been my dinner! (I am talking pre-celiac diagnosis too!)
  13. I would bet that you won't find many people on this board that would drink a drop of regular beer. Drinking beer would be no different than eating a slice of bread or regular pasta, etc. Am I missing something here?
  14. The USA Rice Federation (never knew there was such a thing) has some gluten-free rice recipes and an article on celiac disease Awareness Month. I thought it was pretty cool! I apologize if someone has already posted this. I searched and didn't find it on the board, but I could have missed it. I attempted to insert the link below - I have never done...
  15. Patti, I assumed you lived in Jersey! Here I was feeling sorry for you with the upcoming winter Sorry - wrong "Jersey" person! I got confused - must be too early in the morning for a Saturday! I would just go back to bed but I have class at 8..............
  16. Here's another vote for Namaste chocolate cake mix! We used eggs so I can't help with the egg-replacement question. If you want a good idea of the taste and texture, think "hot-fudge cake" - you know - the kind you put a scoop of vanilla ice cream and hot fudge sauce on......yum!
  17. Jodi, I know what you mean about the gluten-free breads. It seems like most people eventually adapt to the texture of gluten-free breads, but I have not been able to yet. I just don't eat any bread because I cannot get past comparing it to regular bread. Hang in there and I hope someone else on this board can give you some tips.
  18. WOW! Mother of 6 - hats off to you! I have two boys and 3 soon-to-be step children. I don't know that I can offer much advice, though. You see, before being diagnosed, I did not cook much at all. I work full time, go to school full time, and then with the kids extra-curricular activities and school, cooking was never considered an option. We ate dinner...
  19. I think that everyone's reaction is unique. Although DH also typically includes oozing blisters - not just bumps. But you never know. Mine were pretty ugly - and excrutiatingly itchy - but did not look as bad as most of the picture on the internet. One thing that also seems typical is that it is a symettrical condition - if you have it one arm, you have...
  20. This is such a coincidence - last Friday I typed a four page letter to Rachael Ray about living with Celiac Disease. There is no way that this could have anything to do with the show today, but isn't it a funny coincidence? Isn't it great to hear public figures talking about food allergies and intolerances? Thanks for posting this - I would have missed...
  21. My dermatologist is the one that diagnosed me - he took one look at me and said he was very sure that was my problem (this was the first time I saw the guy - I was very lucky, I know). DH is not an allergy - so I would assume you should take her to a derm. They can do a biopsy if they think that is what it is. However, hives is not the same as a DH outbreak...
  22. Sarah, According to Dr. Peter Green's book, Celiac Disease: The Hidden Epidemic", it can take up to two years after beginning a strict gluten-free diet to get everything out of your system and to get relief from DH. My advice to you - and it isn't easy - is just to quit cold turkey. That is what I did. I was a carb-freak before going DH. It was not...
  23. Well, I have to start off with the obligatory "everyone is different". I was diagnosed with DH last October and immediately changed my diet to gluten-free and also began taking dapsone. Although, as you know (and if you don't you will learn) it took a few months before I really understood how difficult the diet is at the beginning. There were many things...
  24. I have DH, plus, my skin has become extremely sensitive. My DH is finally under control (after a year of gluten-free diet and Dapsone that I am still taking...). I have tried every over-the-counter brand that I could find (only after checking the label for suspect-ingredients of course). It may just be coincidental, but I have finally stopped switching...
  25. Patti, I used this recipe to make myself a pizza last night - can you guess if I liked it? You bet! It tasted like 'normal' pizza crust. I used the cornstarch/potato starch mix just like the recipe calls for. I smiled all night. Every now and then out of the blue I would start smiling and Mike would say "you were thinking about your pizza...
