If you can get Pamela's baking and pancake Mix it has on its package recipes for muffins. It also has recipes for cookies besides the pancake and waffle recipe. I would make these often when I was just learning how to bake gluten free. You can get pretty creative by adding whatever you want. Gail

For those who are MSG sensitive its in ice cream listed under natural ingredients, carrageenan or sodium casinate. My husband eats a Ben and Jerry's called Black and Tan and it has malted milk powder in it and I question that as a red flag for celiacs. I wonder about some of the chocolates they use to. Gail -

I believe this is so true. We know gluten causes inflammation and in more people then we think. When the neurotransmitters are firing up constantly it eventually leads to cell death. I don't know what it is about beans but I get really hungry after them. Especially if your just having a serving of them which I suspect you are. I started to include soy in my diet in January but I'm kicking it out again because I too noticed a reaction when ever I had more then 1/2 cup of soy milk. Thanks for the links, I've read one and thought it was very good and I agree totally. I decided to include soy milk and tofu in my diet this year and not eat red meat from cows anymore. I eat buffalo if I want to come close in making a few of my favorite recipes. I never digested the fake of isolated soy proteins anyway so I guess that won't be a problems... -

I try to get enough fiber just by eating the right foods. I can't bare to drink fiber drinks. So I usually have to have two fruits aday. I try to have salads for lunch.
