Do you eat any fruits? Those would be very important, as they would be your main source of fiber, along with veggies. Fresh, raw veggies, like lettuce, carrot sticks, and raw red peppers are very good for you and easy to prepare. Yes, I've been revising that flax skillet bread recipe over the past few months. I doubled it, used buttermilk instead of milk, used a rice flour mix instead of the flour/starch combination, added yeast for flavor, and cornmeal for dusting. Wow, that would be difficult! The best I can suggest is that there would be lots of gluten-free stuff before Passover (there are a lot of things Kosher for Passover that do not use matzoh meal, they use potato starch instead). But that's still 5 months away. But I don't know about the soya. Yikes. Sorry I'm not more help! -

I think canned coconut milk (NOT cream of coconut) can work nicely. Lowfat is closer to the fat content of regular milk, but I have used full-fat coconut milk with good results. I work downtown, at Heinz Hall (1 block from the Benedum)! There is a Qdoba around the corner where the manager is VERY celiac-savvy--his wife has celiac! Practically everything there is safe, as long as you avoid the tortillas and a couple of other things, and he knows to change gloves, use a clean work surface, etc. Their "Naked Burritos" are AMAZING... -
Please look up a book called Unraveling the Mysteries of Autism by Karyn Seroussi--it's by a mom of an autistic child. She was basically able to REVERSE the autism in her son with the Gluten-free Casein-free diet, and she had to fight with an awful lot of doctors on the way.
