Bell, there is more than enough research AND anecdotal evidence to for this to be compelling evidence, not bad science. Perhaps you might search in local autism/celiac support groups and find people in your vicinity who have tried the diet on their autistic child WITH GOOD RESULTS. Nothing convinces like visible success.

No, Rice Chex is now gluten-free! It used to have barley malt, but they now use molasses instead. It even says "now gluten-free!" on the box. -

Your fresh beans do sound good. But maybe you've never had GOOD green bean casserole? I do dislike it when it's prepared with canned beans, but with frozen (especially if you only THAW them before baking, don't cook them first) beans, it's definitely comfort food! For the cream of mushroom soup, I buy (at Sam's Club) a plastic jar of dried mushrooms. I use a bunch of those, a cup of chicken broth, and a cup of cream. Bring to a boil, and thicken with a little cornstarch dissolved in water. Add whatever spices you like. I add garlic, tarragon, and pepper. No salt, because the broth is plenty salty. -

Woolygimp, if you look closely at the tiny little writing on the hot dog packaging (use a magnifying glass!), you'll see that it's sodium nitrite, not sodium nitrate. Not to worry, sbj, I think you are asking a totally valid question! Lack of positive bloodwork and/or positive endoscopy does NOT mean you don't have celiac. There are people whose first biopsy was negative and second was positive--and they had negative blood tests. Does that mean that first they didn't have celiac and then they did 6 months later... -

Great advice from april, but make sure NOT to use Rice Dream if you want to be gluten-free--Rice Dream claims to be gluten-free (even says so on the box), but they use barley enzymes in the processing. They are allowed to list it as gluten-free because it supposedly has less than 200 ppm of gluten, but it's still gluten. -

See if you can get the NUMBERS from the blood tests. They should have run 5 tests, including IgA, IgG, total IgA, and TtG. The thing about a Syndrome is that it is a collection of symptoms (or in this case, a collection of diseases), and the implication is that the doctors have no clue what is CAUSING the syndrome. This doesn't mean that the cause can't be found. In your case, it sounds like gluten is not the cause, unless you are getting gluten unknowingly (a faint possibility...
