  1. I found that 3/4 full was too much. Less than 1/2 full worked a lot better. I used oil, not margarine, too.
  2. Vaccines are a frequent cause of all kind of autoimmune problems, including rashes. One of my sons had a medically documented severe rash reaction to his 4 month vaccines. I am not anti-vaccine--but there is no reason on God's green earth why we have to follow the recommended schedule, and many of the vaccines are totally unnecessary. For example, unless...
  3. My son was never officially diagnosed with this, but he did have several years of OT which helped enormously with this, as did Suzuki violin lessons (no kidding--it helped amazingly--something about using aural pathways to open up eye-hand-coordination neuro pathways). One thing that helped on both counts was learning to hold the pencil lightly and NOT...
  4. I would bet that gluten intolerance/celiac disease is causing your restless legs syndrome. Has your bloodwork come back yet? If it is positive, an endoscopy might be unnecessary, as positive bloodwork is enough for a diagnosis. For that matter, so is dietary rsponse! If you want an endoscopy, though, you need to stay on gluten until that is done ...
  5. Chronic ear infections are often a symptom of casein intolerance. I would eliminate all dairy before considering tubes. A friend of mine went through this with her daughter, starting immediately after weaning from nursing (and starting cow's milk). By the time the doctors were recommending a year of constant, low-dose antibiotics, my friend tried a naturopath...
  6. I think it is possible that going off gluten might completely eliminate bipolar tendencies in a child. There is an Indian doctor who has published a few studies definitively linking bipolar and gluten. I have also read of studies linking caffeine and bipolar. By any chance, might you have drunk coffee while either pregnant with him and/or nursing...
  7. If your dermatologist is talking about "allergy to wheat," he is an idiot. Celiac diseaseis not an allergy, and he should not even be looking for a wheat allergy. Besides, skin biopsy plus the proper tests DOES clearly show celiac disease/dermatitis herpetiformis. I think using steroids as a one-time thing to control the rash and getting her off wheat...
  8. I'm so glad you are okay! What is your cutoff for when abuse is not okay? 10% of the time? 50% of the time? It's so easy to look the other way, find the positive and emphasize that--but what is the limit for the really really bad stuff (like abuse)? In my book, there is NO acceptable amount for that kind of behavior. And there are not excuses. ...
  9. I bake a lot, with very good results (maybe good luck, too). I use Gluten-Free Baking Classics, by Annalise Roberts. The breads are so good, my gluten-eating family scarfs it down and I have to fight for a piece! The author has a website: www.foodphilosopher.com. CLick on "gluten-free archives." The recipes are made in the oven, though, not the bread...
  10. Aveeno products are made from oat flour--and oats are NOT gluten-free.
  11. Whoa, be careful of falafel--it is often made from mixes that do contain wheat flour or wheat starch! On the other hand, Whole Foods (often known as, "Whole Paycheck") makes a mock rye bread that really does taste like rye. Not the best rye, but quite rye-ish, enough to quell the craving!
  12. Hi, Jason, welcome aboard! I know how you feel--I cried for 2 days when I found out. The good news is, there are GENIUSES out there who have invented recipes using other flours and starches, and they taste really, really close to the original. You can use rice pasta for your chicken noodle soup. Manischevitz makes gluten-free noodles out of potato...
  13. Your GI sounds like an idiot. If you had blood work done after starting gluten free diet, of course your results will be negative! Take your biopsy results with you to the specialty clinic--there should be absolutely NO need for a repeat. Once you have celiac, you always have celiac. You can't turn it off. Welcome to gluten-free land! It's...
  14. Allergists are experts in allergies--and celiac is not an allergy, so it is likely that your daughter will end up being tested for wheat allergy, test negative, and then you will be told that she does not have celiac. It is a TOTALLY different misfunction, and the blood tests are completely different from allergy tests. Please do as much research as...
  15. If you are getting a biopsy, you will need to keep your daughter on gluten until the biopsy. I was not told before my own biopsy that going off gluten and being on prednisone would screw up the biopsy results. Meanwhile, you can scout out recipes that duplicate Chef Boyardee using rice pasta for when she does go off gluten--and I would take her...
  16. And what do you want to bet that her baby is celiac and was reacting to gluten in her milk? She probably didn't need to switch the baby to formula, she just needed to get the gluten out of her diet!
  17. I don't believe in divorce, either--except in situations like yours. This man is seriously abusive, and I wouldn't think you would want your daughter to grow up thinking that this is what a marriage should--or could--be like. You are better off alone than with a man like him, and your daughter is better off without a father than with one like him. In my...
  18. DH is celiac disease, even if there is no villi damage to the intestines. Ear infections are often caused by dairy sensitivity, but I don't see why they couldn't be caused by a problem with gluten, too. I had a strep skin infection right before finding out I had gluten problems--and I had only had strep throat once in my life before, even though I grew...
  19. Thank you so much, everybody. His doctors are changing his meds this week, and say that they really don't know what to expect, but that they fear that he is in for a bumpy ride this week. Please keep the prayers coming....
  20. Isn't that a great book????!!! Just make sure that you ask the bookstore for Gluten-Free Baking Classics--if they look it up by title, they might not find it if you leave the "gluten-free" off. She does have other, gluteny recipes on her site, so she may have gluteny cookbooks, too! The flours are NOT more expensive if you have an Asian grocery...
  21. Hi, Trishatrue! I have found that baking gluten-free breads in a glass breadpan sprayed with PAM and dusted with cornmeal (not cornstarch) gives it that nice homemade good taste and texture. I have read that the breadmaker has too much rise time, and gluten-free flours don't support that kind of rising, and don't need to be punched down anyway (that develops...
  22. If you include all the relevant studies, they should be MORTIFIED that they missed this. Not to mention the legal ramifications--what about suggesting that they are liable for any doctor's (any doctor who studied their textbook) malpractice suits for not having considered celiac as a possibility on all the patients who needlessly suffered for years before...
  23. You are a good writer, DOll. Write it all up, include all sources and studies, and send it to the authors with a request that they revise their out-of-date info and credit you. (And see if your instructor will let you teach a gluten segment!)
  24. 2 minutes?? How about 30, plus Q & A time?????? (And of course, gluten-free samples of homemade bread and cookies so they know that it's POSSIBLE and not that hard--let's smash that fallacy about the gluten-free diet being "too hard!" If that #%$^*(%( textbook covers IBS, could you please include a comparison chart of IBS and celiac symptoms, as...
  25. Hey, Barb, welcome aboard! I cried for 2 days, then started baking!!!! Check out www.foodphilosopher.com--click on the gluten-free archives. There is a cookbook by one of the authors--Gluten-Free Baking CLassics, by Annalise ROberts--that is AMAZING!! I always was a baker , too and the stuff I make from that cookbook tastes as good or BETTER than anything...
