  1. To the excellent advice above, I add this: I do not have an official diagnosis of celiac myself (didn't have the biopsy). However, I have no intention of ever intentionally eating gluten again. I have seen how my reflux, autoimmune thyroid disease, and weight problem have dramatically improved upon going gluten-free, not to mention the tummy symptoms...
  2. The symmetry of it makes me suspect DH. I haven't been able to find ANYTHING on the internet about any other skin rash that is symmetrical. Doesn't mean there isn't anything--could just be the typical lack of real knowledge amongst MD's...
  3. I do "Lazy Mom's Soup" every time I buy a (gluten-free) rotisserie chicken. Take the meat off the bones, cube it, and use for various and sundry purposes. Take the bones, the juice, and the congealed glop on the bottom of the container and put into your trusty crockpot, along with water to cover, chopped or sliced onions, carrots, parsnip, 1 sweet potato...
  4. Davey, those look wonderful!!! I have one stupid question, though--what's a kallo???
  5. Hmmm, very interesting. I just looked up Addison's disease, and it said that 70% of cases are caused by autoimmune attack. I seem to be at a phase where I want to blame everything on gluten. Couldn't years of gluten consumption in a gluten-intolerant or celiac person result in gluten-induced Addison's disease? I would think that once something...
  6. The Grain of Truth Bakery Great Expectations Grain-free Expectations Sweet Minus The Wheat Silly Yak Sweets I really like IrishDaveyBoy's suggestions, too!
  7. Well, maybe the original poster here is on to something. I have read about gluten sensitivity being linked with asthma--and my own exercise-induced asthma completely disappeared after going off gluten. There is also a current thread wondering if gluten sensitivity is linked with pleurisy--and several of us posted that we have had pleurisy attacks. If...
  8. Aunt Jemima is not maple syrup plus preservatives--it is fake through and through. Last time I checked, it was high fructose corn syrup, artificial flavor, and preservatives. High fructose corn syrup is evil--it raises your blood sugar, but does not signal your pancreas to produce insulin. I've read that it is a leading cause of diabetes (well, technically...
  9. Does the "cultured buttermilk" mean the liquid or the powder????
  10. Wow, I never thought to check the ingredients of the Banquet crock pot dinners--I always assumed they had gluten! I learn something every day here....
  11. Your skin, ADHD,and thyroid problems are almost certainly caused by the celiac in the first place (I have the skin and thyroid issues, too, if that helps you any). Many people with celiac describe a certain "brain fog" that goes away when gluten-free. Yes, canned beans and canned tuna are most likely safe. Look at the label to be sure (ingredients would...
  12. My understanding is, this is not so! The antibodies should not be be there if you are not ingesting anything to make your body produce those antibodies!! The antibodies are what attack our bodies and make us sick, so that is the whole reason we stop eating gluten! As far as damaged villi are concerned, I have read studies with varying results, and it...
  13. You're giving me cravings now!!!! I'm gonna try it as calzones next time--I'll let you know if it works? (I don't see why it wouldn't.)
  14. Try www.betterbatter.org. I don't know if I copied it incorrectly before or if they changed it.
  15. This is the crust I like, and I have to fight my gluten-eating kids to get a piece for myself: gluten-free Pizza Crust 1 packet yeast (about 1 tablespoon) 3/4 cup buttermilk, room temperature (if casein-free, use rice milk with 1 tsp cider vinegar) 1/2 cup potato starch 3/4 cup cornstarch ...
  16. Aack!! More sugar is the worst thing possible for hypoglycemia!!! Here are more {{{{{HUGS}}}}}--hang in there!
  17. I found this on the Internet--don't remember where--and haven't yet tried it. Almost-like-Pamela's baking mix: 1
  18. First of all: {{{{HUGS}}}} Second of all--YOU CAN DO THIS!!! Second-and-a-half-of-all (late edit): Doesn't Swanson chicken broth contain wheat starch? Or is that College Inn? Third: your diet seems awfully heavy on carbs and starches and awfully low on vegies, fruit, and protein. Could a systemic yeast infection be a possibility? That might...
  19. I only buy frozen bread (Kinnikinnick) for emergencies. That's the only frozen gluten-free thing I buy. I make everything else from scratch. It's really not too hard. I make a big batch (12 cups at a time) of gluten-free pancake mix (white rice flour, brown rice flour, tapioca, corn starch, potato starch, xanthan gum, baking powder, sugar, and salt...
  20. The have a website--www.gluuteny.com. Check it out before you trek out there and save yourself a trip!
  21. EDIT: THE WEBSITE IS WWW.BETTERBATTER.ORG--sorry about the confusion The website is www.betterbatter.com--and they have recipes on the website! You can order some of their flour--it's supposed to be a cup-for-cup replacement for the gluteny stuff--and have it shipped, but I've been trying to get ahold of the buyer for our local supermarket so...
  22. Mmmm, they all sound good! I sautee chicken tenders in olive oil, and then deglaze the pan with white wine and lemon juice. There's also chicken marsala, which is similar, but I add garlic, onions, mushrooms, and red peppers, and use marsala instead of the white wine. Both go great with a pot of white rice, and kids like them, too, especially...
  23. I think that there are "subsets" of celiac, which manifest themselves in different ways. I'm convinced that fibromyalgia is one such subset, for example. If you look at the symptoms list, it's identical to those of more "advanced" celiac (celiac that has gone undiagnosed for years), but it does seem to come in flares. And very, very few if any doctors...
  24. OMG, I know what you mean! When they do that, I just want to say, "Look, I may not have an MD after my name, but I am just as intelligent and well-educated as you are, PLUS I have researched celiac disease for (fill in the blank)--How much research have YOU done on celiac disease?????????" Hang in there sickchick, so we can start calling...
