A strict allergen free diet can work wonders. You should have seen my daughter's scope pictures when she was diagnosed with EE compared to her follow up. The doctor was amazed and said if he didn't know she was on the restricted diet he would have had to "undiagnose" her. This is one of the BEST doctors in the area. I've been on this site for a while and Kawasaki comes up quite a bit. I believe there is a link. My daughter has Celiac and Eosinophilic Esophagitus. -
If you go to a Gi you have to keep eating gluten for the testing. If you start the gluten free diet and it helps you, it would diagnostic evidence of at least gluten sensitivity/intolerance.

We just use potato chips. No recipe really. Add whatever you like i.e. parmesan cheese you don't need to add salt though. Make it stick to chicken pieces any way you can and bake in oven. Not healthy at all, but they sure taste good. -

It might actually be Pernicious Anemia, which is associated with Celiac. The damaged gut lining does not have the intrinsic factor to process B12. Find out your actual test results on your test and the ranges of "normal". -

I would not go so far as to say No food celebrations. You just need to know when you need to supply a safe treat. Celiac has damaged my gut to the point I can't eat spinach, too many cherries, or raisins. The higher the iron content the less chance I can't eat it. Multivitamins with iron? Keep her on the "NORMAL" diet and get the appointment moved up. She has way too many symptoms of Celiac and related vitamin defiencies. PICA, and B12 related nuero panic attacks at age 2. This one is probably going to have the gluten withdrawal symptoms too. Gluten can have an opiate like affect on some individuals. Get the testing done as soon as possible...
