  1. I thought other posters had it right in the responses. Call it Celiac/ allergy/ or whatever seems to ring a bell for people that you aren't eating gluten for health reasons. I don't want someone to stop looking for answers to WHY gluten is making them sick. If gluten excerbates medical conditions, there could be a serious illness that can only be helped...
  2. No eggs. No omelettes, quiche or any basic egg based meals. Cherrybrook Kitchen has a nice pancake mix (gluten, egg, and casein free).   3. Well I have some concerns as to not finding the medical reason gluten consumption is making you feel so sick. For example... My daughter has Eosinophilic Esophagitus. It has "trigger" foods or airborn "triggers". Gluten can be the "trigger" for some affected individuals. Eosinophils can be in any part of the GI track and now they are "lumping" all the...
  4. The genetic test is not 98% accurate. You could have fallen into the known 2% missed range. Not all Celiac genes are known at this time. & Every test done has at least a 30% error rate in human handling.
  5. I would get them tested as soon as possible. School physicals are due soon too. Parent guilt over the frustration of the situation would be over too. You can all go gluten free together. (You'll bond like you never imagined.)

    I swear by taking Biotin! The main food source would be consuming animal liver. Not gonna happen for me that way. I have found no research saying that it can be harmful either. My hair falls out after I have been glutened too. I currently am not taking probiotics. Just food sources.
  7. I use jam and jelly for baking. Make some jelly roll cakes. Use it a layer under frosting for cakes.
  8. Well at least 30% of undiagnosed Celiacs have poor functioning gallbladders. It could be Celiac. There are a lot of variations for Celiac and other GI disorders. You have been tested for a few of these already. You need to keep eating gluten until the testing is done.
  9. That is correct some genetic testing can just add to the puzzle. They don't know all of the genes associated with Celiac and there is still error rate. At least 30% possibility of human error for any test. Our genetic testing experience... My daughter positive for DQ2 and DQ8. My testing completely negative for any known Celiac genes and clearly not...
  10. You could have the genetic testing done to see if you are positive for known Celiac genes. That is not the "gold standard" diagnoses though. It is also known that a gluten free diet is helpful in treating IBS and autoimmune disorders.

  13. I do think it is possible to have had a false negative Celiac test. It is also possible that gluten can "trigger" other disorders. (Eosinophilic disorders for an example.) Keep a food journal since many sensitive people have more than one allergen to avoid.

  15. Out back Steakhouse in Rochester, MI had gluten free bread! It does have egg in it. I'm not sure about the casein. It tasted really good.

  18. Before I was diagnosed with Hashi's I thought I was going to die after eating what tasted like pure salt shrimp. I felt like I couldn't drink enough water to get the salt taste out of my mouth.   20. If you find a flour blend that you can have then it has to work well for that particular recipe. Like Tom Sawyer gluten free flour mix has gelatin in it and works better for us because it has to be egg free too.   22. I have substituted gluten free flour mix that I have had on hand because I ran into problems finding the super fine rice flour. Tom Sawyer gluten free flour mix was great in the recipes it has a bit of gelatin in it. Happy baking! Time, patience, and practice.
