  1. I don't think there is a straight answer to this - you will have to go by 'feel'. Some folks don't have a problem with dairy, some can tolerate a bit. Myself, I have half & half in my coffee and cheddar now & then, sometimes homemade veggie dip with plain yogurt. Too much dairy can give me a similar reaction to gluten. I don't worry about cross contamination...
  2. Sometimes this whole thing can be such a mind game !!! Bood tests, food research, reactions that we have a hard time tying to what we ate... I am a hardcore fitness instructor & enthusiast. I teach about 14 classes a week - some from the deck of the pool, some in, and some at a studio with intervals and weights. I get at least 8 hours of sleep a night...

  4. I gave my kids' bus driver chocolate for years - when she had retired someone told me she couldn't eat it, but her husband loved it!!! Ugh.   6. I bring food in all the time, I am just quiet about it. We had family up & went out for breakie and I brought my own dry cereal - just asked for a bowl and a glass of milk and a couple of hard boiled eggs. I was with serveral people who all ordered breakfasts. We were in an english pub, 4 of us, and I ate my tuna & crackers while everyone else...

Somewhere in the area of a week - depending on how much gluten I ate - ie. cross contamination versus having a meal where the waitstaff erroneously told me it was gluten-free, the latter taking longer to get over. For me, it also depends on what I do. My best plan is to eat very light, very safe (nothing that coud have any gluten), drink lots of water...

  14. I have been gluten free for about 11 years - a few years ago I had the whole gallbladder work up because of pain in that area - the doc said it was fine. Keep in mind I am not "officially diagnosed" with celiac because my original doc was an idiot. The doc I worked with on this said one can get localized infections in the intestinal tract....???......
  15. I too like the Bob's Red Mill Mighty Tasty rice cereal - I make it with more water than it says to. I also mix in some ground flaxseed and an egg just as it finishes cooking (making sure the egg is cooked) and then walnuts and cranberries. I think I use 1/4 cup of cereal to about 1 cup of water.   17. Sometimes it takes awhile for those folks around you to get it - they have seen you eat gluten for years. Really, the best thing you can do is be consistent in not eating gluten, be strict. I have had -lots of 'female' examinations -my gallbladder checked out & ultrasounded -3 colonoscopies in 20 years (different docs as I lived in different places) -all sorts of reflux meds -joint pains...
  20. I agree- packaged gluten-free foods are treats! Rice (I eat ALOT of rice), quinoa, potatoes, yams, beans if you can handle them, gluten-free pasta as a treat - those are our staples. It took a bit of a shift but no longer relying on bread type products helps. If I eat a gluten-free hotdog (Costco) I put ketchup & mustard & ketchup on a plate...
  21. I agree - it's best to nip it in the bud at the risk of offending someone. I have heard "it's gluten free, I used whole wheat flour"....huh. Also, even if they use gluten-free ingredients they are no doubt baking/making it in gluteny pans or cutting boards or colanders, whatever....you are going to get zinged.   22. I'm somewhere in the middle. I have a variety of gluten-free flours & I bake & cook with them - no problem sharing. However, when out & about and I purchase a serving of something gluten-free I am less inclined to share. I have told my kids or my hubby that I watch them eat all kinds of stuff I can't, so no big deal if they can't have my stuff...
  23. My friend I think it is time you decided you are in control. Many celiacs don't have a confirmed diagnosis and at some point it just doesn't matter. What does matter - is being healty. You think you have celiac, you react to gluten - you are very likely damaging your intestinal tract and your body by continuing to consume it. A weekend test isn't enough...
  24. I agree - celiac is not an allergy and is more than gluten sensitivity. Many celiacs are also sensitive to milk (not allergic).   25. I had years of bad reflux to the point of being on a variety of meds...nexium and a few others. They were not entirely effective. Going gluten free all but put an end to my reflux issues. In fact, if I start getting any reflux issues I have to analyze my diet & see if I might have glutened myself ! Alcohol can cause me reflux, especially with fatty food...
