  1. I've heard that shortening works better in gluten-free cookies, but like you I can't bring myself to use it. I have always used margarine (like that's much better) in my baking, and still do now that I'm gluten-free, and everything so far has turned out (well, my first 2 tries at chocolate chip cookies didn't look so good, but they tasted fine - now...
  2. They carry very different things from coast to coast - I can't get most of the stuff that people talk about on here, but what I do like ar the praline pecans (yum!) and the pampadums (some kind of Indian "chip" - read ingredients b/c I think only one flavor is gluten-free) and the cherries (in a jar near the jams - these are yummy on ice cream or waffles...
  3. I make the chocolate chip cookies from the landolakes website and use white rice flour (not sweet) in the gluten-free flour mix and they turn out so good - just like my "famous" cookies before gluten-free! Sometimes when baking (usually muffins/quick breads) I use brown rice flour - I think it might be interchangable but haven't yet used the brown rice flour...
  4. I'm not sure about kids, but I know before I went gluten-free I would have 8 plus stools (mostly D) per day. After about 6-7 months on the diet, it went down to 2-3 per day, and it wasn't D anymore. I do notice I go alot more if I eat corn or if I have a glass or regular milk (ice cream/cheese, etc. are ok with me). Maybe you could try limiting dairy for...
  5. I hear ya - if I didn't have a positive dx (before I had even heard of celiac or knew how to spell/pronounce it!) then I wouldn't be on this diet, but since I had positive blood and biopsy, I stick with it. It took me 6 plus months to notice any difference, and I still have stomach issues (been 1 yr gluten-free) but my intestines were totally damaged and...
  6. wow, I didn't know they had people who would do that (show you around) - that's great, since it's so hard to find the gluten-free foods (since they are mixed in with regular stuff and not labeled the same way). I also like quinoa - I haven't tried the flakes or flour, but I buy quinoa (the grain - looks like couscous I think) which is usually with...
  7. Jenny C and I seem to have the same tastes I love the Bell and Evans gluten free chicken nuggets or chicken tenders (the black and red box - NOT the blue box), Welshire Farms or other brands of flavored chicken sausages (the big thick ones) - there are many brands that are gluten-free - just read ingredients. You definitely need xantham gum - it is expensive...
  8. The K-Toos (Kinnikinnick oreo type cookies) are great, and so are the Envirokidz vanilla animal crackers (I think only the vanilla are gluten-free - they will say so on the box). Also, I like the Envirokidz cereal bars - they are made with rice cereal. My favorite is the peanutbutter but they have berry and chocolate too. You can also make krispy treats...
  9. Anyone drink this?
  10. I've tried searching the web and I tried contacting the company but get no response - does anyone know if IBC root beer is gluten-free? There isn't anything suspicious on the label, but I can't seem to confirm one way or another whether it's safe.
  11. We usually eat taco salad (ground turkey seasoned with chili powder/cumin/garlic powder and add some water and can of beans and cook, then serve with lettuce, cheese, tomatoes, black olives, crushed corn chips, salsa and sourcream) b/c that is the only salad that my husband will eat as a meal. But tonight he wasn't home and I didn't feel like cooking, so...
  12. My symptoms from a glutening don't show up until the next day, and they last (and change) over 2 weeks. The D usually starts around day 3 and lasts a couple of days, along with lots of other symptoms. Dairy on the other hand gives me D fairly instantly (within an hour) - not ice cream but a glass of milk or cheesecake would do it.
  13. I have depression when glutened - the depression starts at the tail end of my other symptoms (after day 3 or 4) and lasts a good week. I've only been gluten-free for a year now, so I'm hoping the depression will eventually go away totally, but it is one sure way I can tell I was glutened.
  14. I was dx with IR about 5 years ago (when I first started trying to get pregnant and figure out what was wrong with me. I wasn't dx with celiac until 1 year ago, and I truly think that it was celiac all along (and not IR), however, the symptoms I had back then were dizzyness/passing out, night sweats, cold fingers/toes (Raynauds disease), frequent urination...
  15. I like these too (the peanut butter one is what I tried) and I'm REALLY picky with bars. I don't like any of the gluten free bars (Lara, Bumble, etc.). I've tried them all and just can't get past the "fake" taste. Of course, I never much liked "regular" power bars either, but these are really good.
  16. The best gluten free chicken nuggets (they have chicken strips too) are Bell and Evans - they are in a black and red box (make sure you get the gluten-free blac and red box b/c they make regular ones too) and are in the frozen meat section at Whole Foods (NOT the regular frozen food section - they are with the meat). They are much better than any of the...
  17. First I'd make sure you are 100% gluten free - did you check your shampoo/conditioner/lipstick/lotion, etc.? New toaster, collander, wooden utensils/cutting boards? Any risk of CC? It took me 6 months gluten-free before I started feeling ANY better, and I'm still not 100% (I was in denial about dairy, but after a few months decided I needed to at least...
  18. I know the last 3 things are gluten-free (I use them and confirmed with Clinique), but not sure about the first 2. I think the "list" they have at their counter will say the ingredients, but not necessarily in plain English (so you can't really tell what is wheat, etc.). You can email Clinique with the specific items and they will respond fairly quickly...
  19. actually, potato starch and flour are NOT the same (very different), but tapioca flour/starch is the same. You can not substitute the potato starch for flour or vice versa. Most recipes I've seen actually use the starch (that's the only thing I"ve baked with, mixed with tapioca and rice flour).
  20. I switched to Dove also when I found out my other shampoo/conditioner had wheat. It's not as good as what I used to use, but it works (I have very fine hair also).
  21. I've eaten there several times and never had a problem. I order the burger no bun and steamed broccoli (I don't like their mashed potatoes). Make sure you ask for the gluten free menu and make sure your server knows you are ordering from it so they can use a clean grill/pan. I think it even says that on the gluten-free menu.
  22. I'm due June 30 (just went in for a version today - very painful!) and this is my second. Didn't have any problems with the first - she was so easy, but I didn't know I had celiac then (just found out a year ago) and wasn't gluten-free. My digestive problems didn't start until after her birth, but I had all kinds of other problems prior to getting pregnant...
  23. That's so funny b/c all of my problems are on my left side of my body - split us in half and we'd make a perfect body! When I first went gluten free I developed a throbbing pain in the left side of my neck - turns out it was a goitter (thyroid problem) - I think b/c I substituted soy for a lot of gluten and supposedly soy is bad for thyroid problems ...
  24. Sarah, Swansons chicken and beef broth (in the cans) are gluten free - I confirmed with them. Also, both Ruffles and Lays are gluten free, however you can have the issue of cross contamination with both - that is a personal decision. I eat Ruffles sometimes, but not often, and haven't had a problem. I eat Tostitoes quite often but never have a problem...
  25. Jamocha shake! That's the only thing I will order from Arbys anymore
