  3. From what I've read, in the US (not sure about other countries), the caramel color is made from corn (sodas, etc. are gluten free). And anything made from wheat has to say wheat somewhere in the label, but as wolfie said, barely and rye, malt, etc. do NOT have to be listed (although I think pretty much most modified food starch is either wheat or corn)....
  4. It takes me about 2 weeks for all the symptoms to die down, but the intestinal issues are usually gone after about 5-6 days (then just lagging depression and fatigue).

Hypothyyroid often causes depression - I have Hashimotos (where my thyroid goes back and forth from hypo to hyper), but even with my thyroid regulated my depression didn't get better, so I just started taking 25 mg of zoloft per day, and it has really helped. I've heard that it can take a few weeks for the antidepressants...

  12. Be careful of some dried fruit (and nuts) - I've seen wheat added to nuts and heard that sometimes dried fruit is coated with it so it doesn't stick. Just read the label - it will be listed in the ingredients. All fresh fruit and veggies are gluten-free, and I haven't found any canned or frozen (other than those with sauces, etc.) that aren't gluten-free...

  24. I am the only (diagnosed) celiac in my family, but since I do the baking, for my 2 year old's bday party I made a gluten-free cake and cupcakes. I was using BJs (the wharehouse store) brand (get them behind the pharmacy but not a prescription), but they just closed our BJs pharmacy so now I"m using Target prenatal - I confirmed they were gluten-free.
