  1. How 'bout if we just call this ALL Celiac, with intestinal damage just being one of the possible symptoms.   9. Hi Janny, Whole Foods and Trader Joe's both have gluten free selections. Uwajimaya in downtown Seattle has a lot of gluten-free Asian foods. There are a couple of gluten-free bakeries in the U district and the Elliot Bay Bookstore in downtown Seattle sells gluten-free treats.
  10. I buy from the bulk section. My store has all the non-gluten stuff on top and the gluten stuff down low so I don't worry about fallout. Sometimes I wonder about some dufus using the wrong scoop, but I haven't had a problem yet.

  13. I find that even the nastiest bread improves if you soak it in eggs and milk with a little vanilla and fry it up (french toast). Some you need to let soak a little longer or add a little more cinnamon or nutmeg or other spice, but most of them can be salvaged.

  23. I make my own flour mixes that are about 1/3 rice flour, 1/3 potato/corn starch, and 1/3 (buckwheat, teff, amaranth, soy and a pinch of flax seed meal) in not very strict amounts. For lighter recipes (cakes and cookies) I might mix this with tapioca and sweet rice flour, but for most stuff I like the "healthy" taste the darker flours impart.
