Peanut Butter Cookies

I'm munching on fresh ones now!  Perfect for parties and no one knows they're gluten-free!

 

1 cup Peanut Butter

1 egg

1 cup sugar

3 T. sugar

 

Roll into 1 inch balls, roll into sugar, bake at 350 degrees for 10 minutes.  Cool and eat.  Freezes well!

1 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup packed light-brown sugar

1/2 cup semisweet chocolate chips

1 large egg, beaten

1 teaspoon vanilla extract (optional)

Smash with a fork.

It uses so little egg, I think it's ideal for egg replacer.

I've made a no cook version before:

 

2 tbsp or so peanut butter

A drizzle of honey

powdered milk (enough to make it bind and not sticky)

add chocolate  chips or other good stuff to the mix

 

roll together and store in fridge till firm

 

This recipe has no real recipe. It can be modified and so on easily.

My Mom makes these (w/o rolling them in the sugar) and presses a Hershey's kiss into them at 9 minutes and returns to the oven for  a minute.

She loves them :)

No flour.  Got this recipe from a Jr. High Home Economics teacher over 20 years ago.  It's fast and easy.  I like everyone else's modifications too!

It would be worth a try.  It's been years since I've used egg replacer (I can tolerate eggs in baked goods -- but not by themselves!), but Shadow's recipe looks good!  I'm going to try Karen's recipe too! I admit I do have a sweet tooth.

Me too..I make these with almond butter....going to add choc chips ala Karen next time :)

Yep, that recipe is pretty easy to do. I learned how to make it as a project when i was in middle school. It is very forgiving and easy to adapt to whatever you want to do to it.

      What you’re describing is actually very common, and unfortunately the timing of the biopsy likely explains the confusion. Yes, it is absolutely possible for the small intestine to heal enough in three months on a strict gluten-free diet to produce a normal or near-normal biopsy, especially when damage was mild to begin with. In contrast, celiac antibodies can stay elevated for many months or even years after gluten removal, so persistently high antibody levels alongside the celiac genes and clear nutrient deficiencies strongly point to celiac disease, even if you don’t feel symptoms. Many people with celiac are asymptomatic but still develop iron and vitamin deficiencies and silent intestinal damage. The lack of immediate symptoms makes it harder emotionally, but it doesn’t mean gluten isn’t harming you. Most specialists would consider this a case of celiac disease with a false-negative biopsy due to early healing rather than “something else,” and staying consistently gluten-free is what protects you long-term—even when your body doesn’t protest right away.

      Yes, I meant if you had celiac disease but went gluten-free before screening, your results would end up false-negative. As @trents mentioned, this can also happen when a total IGA test isn't done.

      I found at Disney springs and Disney they have specialist that when told about dietary restrictions they come and talk to you ,explain cross contamination measures tsken and work with you on choices. Its the one place I dont worry once I've explained I have celiac disease.  Thier gluten free options are awesome.

      Have you tried Pure Encapsulations supplements? This is a brand my doctor recommends for me. I have no issues with this brand.
