Easy Christmas Cake

Hi, I have purchased Bobs Red Mill all purpose baking flour to make a Christmas cake.  I really want something relatively easy, and was wondering if someone can direct me to a simple recipe whereby I can use this flour and make a cake that's half decent.

What about a Christmas Yule log? Got a jelly roll pan? We made gluten-free pumpkin rolls using the standard Libbey's Pumpkin recipe off the can and it was yummy! Here is a chocolate one, but I would sub out the white frosting for a chocolate one decorated with shaved chocolate, piped holly to make it look like a log.

Hi thank you...I really want to do a Christmas cake, I have bought all the ingredients and last night I did find a recipe so I think I will go for it...the chocolate log looks good and so I have printed that off too for another day..thanks again.

It looks like Christmas cake is different for each nationality.  ????

Hi, I am English and a traditional Christmas cake has lots of fruit, nuts and alcohol in it...I made it yesterday, but it will be a week before I eat any of it, and so because I have had a few disasters :unsure:  with baking recently  I wont post the recipe yet, I want to make sure it tastes fine, also I have added rum to it, and i plan on adding more today and in five more days...so once I know it tastes fine I will post the recipe. :D

Cyclinglady...you just made me want to make this yule log for Christmas! Yum! I made a pumpkin roll for Thanksgiving and everyone loved it.

I've never heard of cake enhancer either.  The King Arthur Cake Enhancer has this for ingredients:

INGREDIENTS: EMULSIFIER (RICE STARCH,
POLYGLYCEROL ESTERS OF FATTY ACIDS,
MONO- AND DIGLYCERIDES OF FATTY
ACIDS).
Produced in a dedicated gluten-free, allergenfree*
manufacturing facility.
*free of the 8 most common food allergens

The KAF cake enhancer is something they use in all their cake recipes but they say is optional.  It makes stuff stay softer and moist longer.  Ive heard some great things about it but never tried it myself.

I never have used an enhancer. Must be the same stuff that is in Twinkies! Rumor has it that they can last a decade or more! Commercial bakers need a long shelf life, but I prefer to eat most thing right out of the oven or I freeze it. Need more moisture? Add more oil or butter.

I just found the recipe online for the Log/roll for easy reference. I did not realize it mentioned an enhancer. Sorry!

ingredients from commercial snack cakes terrify me!!!  bring on the zombies, just don't hit me with a twinkie!!!!   ^_^  :lol:

I have used a gluten free flour replacer that had gelatin.  I did help keep the shape and moisture for cakes.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
