Hi Susan--Good to hear you feeling so chipper! My rec. on the ice cream machine--get the Cuisinart. Several of us have it--it's very easy to use!

This is what I did Susan,

I used a steamer basket and put it in to a big enough pan (that has a lid) so the tortillas would be flat, filled the pan with an inch or so of water and brought it to boiling (make sure you watch the water level because you don't want tit to evaporate out and burn the pan) then once I saw steam rising from the boiling water, I placed a couple of tortillas in the basket and put the lid on. I steamed them just for about a minute or so.

Steaming makes the corn tortillas really moist and pliable, it doesn't dry them out, and I think it brings out the sweetness of the corn.

MiaMia, I think it was you that mentioned you eat spinach? It is one of the major "big ones" on all of the foods that have naturally occuring histamine. Maybe you could try to go without it for a week and see what happens? Just a thought.

The spinach thing is definitly something I should try but its hard I have not found many vegees that I can tolerate and I was always alright with it- or so I thought .

I feel like I keep finding all these things to cut out but nothing much to add.

I'm envisioning Karen, on an Oscar Meyer float, big bun and all ;) , with a necklace made of mini-Altoid tins connected together . . . and some really ummmm evocative, maybe, costume. I agree with the Ice Cream Man theory, and she could do one of two things . . . wear one of those "Change-maker" things around her waist (too mechanical, maybe), OR, as part of a Rachelville is a Wonderville theme, she could simply toss Altoids out to the crowds (all except the Cinnamon . . . ouch) . . . . She could have a crown, and wear the long white gloves, and wave like parade princesses do . . . . And, should someone become harmed in the mad rush to see the Altoid Goddess on Parade, then I can patch 'em up, and send 'em back out!!! Yeah, THAT'S the ticket!!

Hi Rachelville friends! I just had to stop by an internet cafe and visit Rachelville, because I'm hungry and I miss the place where all the food is safe and happy and gluten and auxigro and everything else free! Grow me some food and have the geese fly it over! LOL haha...but it's okay...I'll figure out how to eat here! I even found a place today that sells Bumble Bars!

I don't really know what's going on in Rachelville, but I saw a box of altoids showed up :o and the population grew! My internet time's up.. gotta go!

How are things today? I have not used dairy in over 2 years. I use Vance's Dari Free. It's a potato-based milk substitute--it contains no soy, grain, nuts or gluten. It makes pretty good "ice cream!"

Thanks, Armetta--I should try it. It would be easier to make chocolate "ice cream" with it! I bet it also makes good hot cocoa :P I'm happy to see you posting. Are you doing any better? I've been thinking about you :)

Patti, I am doing better, but the doctor said this past Monday that I have a ways to go in the recovery process. I don't post long answers, but have started to again get into the forum.

Can you give me a link for the ice cream that you make? I only ordered a qt. of the chocolate and wished I had ordered more this last time. I really had no idea how great it would be. You are going to love it. Hugs.

Armetta--I emailed Vance's and they got back to me with several recipes for ice cream. I printed them off, and deleated the email. The thing I notice about the recipes is that they use things like gelatine and eggs--both of which I don't want to use. The ice cream also comes out of the machine nice and soft, like custard--but when you transfer it to a container and freeze it, it becomes rock-hard. We determined that it was because it has no fat. Anyway, I've experimented with it and found that adding a banana or two (blended in the blender) helps with the hardness. Here's the recipe I used the other day.

In blender combine 2 bananas, 2 cups of Vances (prepared thick), 1 cup sugar, 2 tsp vanilla, 1/2 tsp. cinnamon, 1/2 cup chocolate chips (ground to almost a powder in the blender). Blend until smooth. Pour into ice cream machine, process for 20-30 minutes. Done.

You can take the idea, and add or omit anything that you like. :)

I think you'll survive... but moving is stressful... you should make tomorrow a relaxing day- go get a massage or something.

I believe the shelf life dry is a year (unopened or in an airtight container), after mixing with water, it's a week.

Acorind to thier FAQ, Vances prepraied as milk lasts about a WEEK, Vances power if sealed in air tight container is good for a YEAR.

      Hi,  My 7 year daughter has complained of this in the past, which I thought were part of her glutening symptom, but more recently I have come to figure out it's part of her histamine overload symptom. This one symptom was part of her broader profile, which included irritability, extreme hunger, confusion, post-nasal drip. You might want to look up "histamine intolerance". I wish I had known of this at the time of her diagnosis, life would have been much easier.  I hope you are able to figure out.

      My 5yo was diagnosed with celiac last year by being tested after his sister was diagnosed. We are very strict on the gluten-free diet, but unsure what his reactions are as he was diagnosed without many symptoms other than low ferritin.  He had a school party where his teacher made gluten-free gingerbread men. I almost said no because she made it in her kitchen but I thought it would be ok.  Next day and for a few after his behavior is awful. Hitting, rude, disrespectful. Mainly he kept saying his legs were shaking. Is this a gluten exposure symptom that anyone else gets? Also the bad behavior?

      Not necessarily. The "Gluten Free" label means not more than 20ppm of gluten in the product which is often not enough for super sensitive celiacs. You would need to be looking for "Certified Gluten Free" (GFCO endorsed) which means no more than 10ppm of gluten. Having said that, "Gluten Free" doesn't mean that there will necessarily be more gluten than "Certified Gluten" in any given batch run. It just means there could be.

      I think it is wise to seek a second opinion from a GI doc and to go on a gluten free diet in the meantime. The GI doc may look at all the evidence, including the biopsy report, and conclude you don't need anything else to reach a dx of celiac disease and so, there would be no need for a gluten challenge. But if the GI doc does want to do more testing, you can worry about the gluten challenge at that time. But between now and the time of the appointment, if your symptoms improve on a gluten free diet, that is more evidence. Just keep in mind that if a gluten challenge is called for, the bare minimum challenge length is two weeks of the daily consumption of at least 10g of gluten, which is about the amount found in 4-6 slices of wheat bread. But, I would count on giving it four weeks to be sure.
