I had an uncle who was a farmer a long time ago when I was a kid. If you add wheat or oats or some non- meat filler to sausage, it's considered cheap and not of a good quality.

They need all that wheat to sop up all the fat :o I bought some from an independent butcher who uses rice flour, but he still put all the fat in so they had a LOT of rice flour!! :unsure: Very hard to get a decent chicken sausage here. I tried making my own turkey sausage patties but they had made a mess mousse out of the turkey :rolleyes:

My grandma used to teach in a 1 room school in Iowa. She would stay with different families for a month at a time. She loved to go to one house that made the best sausage. Instead of just putting the junk bits of the pig in like most people, they put the whole pig into the grinder ( not bones). Very high quality and delicious. She lived to 100 eating like that!

I only had two tiny glasses of wine then switched to water. Whatever allergens I was consuming made it difficult to breath and I didn't want to make that worse with alcohol. Not sure what else was in the sausages. Peach maybe (allergic to peaches).

Just bought gluten-free sausages for when my son comes home. Now I don't think I'll chance them. I'm so sensitive to everything. Any of you ever get depressed when glutened? I've been feeling depressed lately and I hate it! I'm a pretty upbeat person but have been waking up depressed almost daily.

We have a company here that makes lovely chicken and apple sausages. Apparently, Americans like different flavors in their sausages. Peaches get used a lot in sauces and salsa, too. I did not know a peach and a peanut were cousins.

Just used some of my overcooked potatoes from the other night to make potato pancakes or " Irish Latkes". Yummmmm! Have been wondering if you could do that with overcooked, mushy rice?

I make a rice omelette for breakfast frequently and it's delicious.

Where do you live? When we were first coming up to our new house we frequented an Irish Diner and I LOVED the bangers. I never connected them to the fact that I suffered the big D within a half hour. Now my husband and son go there without me as everything is cooked on the same grill and there's no way for me not to be glutened. Boy do I ever miss them!

First time I ever saw him was in a movie . . . don't recall which one . . . and I thought . . . :huh: . . . WIH was THAT?? I thought it was a normal actor playing an odd character. Now I know it was an odd actor playing a normal character. Now that I've seen additional movies and interviews and such, I still think he's odd . . . but he-larry-us.

Youse guys need to come to my house for a weenie roast and smore-a-thon . . . the patio and fire pit were officially opened for business last night.

We watch it and can't imagine who's going to replace him. Have you seen the British version? Ricky Gervais is another favorite of mine. He's making a fortune on the residuals of both versions of the office.

Back to Russell brand. I do find him hot but have to admit to a very long lived crush on Robert Downey Jr. My son finds it gross.

Got home a little while ago from South Jersey--that 2 hour drive seems to go faster each time :D Just put a pizza in the oven--Peter, I used GFP French Bread mix for the first time as a pizza crust. 2 questions--do youse freeze the crusts shaped? and how thick do you spread the batter in the pizza pan? I used a spatula and just winged it but it's taking longer than the 15 minutes the instructions said to bake it. I might have used too much :unsure: oh--3 questions--how many crusts do you get per box?

I'm hoping to eat it in a few minutes whilst watching Russell on LKL. :DB)

Had me pizza all set and everything :angry:

But OMGawd....this was THE best pizza I've had gluten-free. The phunny thing is that I've been making the GFP bread regularly all this time and never used it fer pizza. I've been shulmping all the ingredients out and making a so-so crust from scratch--and all this time the perfect one has been hiding in my cupboard! :o:lol:

Just returned from Waldo pizza. Had pizza and beer. They have like 5 gluten-free beers and 2 ciders. And something called Sake2 me which is a gluten-free sparkling sake drink.

      Welcome to the forum, @Judy M! Yes, he definitely needs to continue eating gluten until the day of the endoscopy. Not sure why the GI doc advised otherwise but it was a bum steer.  Celiac disease has a genetic component but also an "epigenetic" component. Let me explain. There are two main genes that have been identified as providing the "potential" to develop "active" celiac disease. We know them as HLA-DQ 2.5 (aka, HLA-DQ 2) and HLA-DQ8. Without one or both of these genes it is highly unlikely that a person will develop celiac disease at some point in their life. About 40% of the general population carry one or both of these two genes but only about 1% of the population develops active celiac disease. Thus, possessing the genetic potential for celiac disease is far less than deterministic. Most who have the potential never develop the disease. In order for the potential to develop celiac disease to turn into active celiac disease, some triggering stress event or events must "turn on" the latent genes. This triggering stress event can be a viral infection, some other medical event, or even prolonged psychological/emotional trauma. This part of the equation is difficult to quantify but this is the epigenetic dimension of the disease. Epigenetics has to do with the influence that environmental factors and things not coded into the DNA itself have to do in "turning on" susceptible genes. And this is why celiac disease can develop at any stage of life. Celiac disease is an autoimmune condition (not a food allergy) that causes inflammation in the lining of the small bowel. The ingestion of gluten causes the body to attack the cells of this lining which, over time, damages and destroys them, impairing the body's ability to absorb nutrients since this is the part of the intestinal track responsible for nutrient absorption and also causing numerous other food sensitivities such as dairy/lactose intolerance. There is another gluten-related disorder known as NCGS (Non Celiac Gluten Sensitivity or just, "gluten sensitivity") that is not autoimmune in nature and which does not damage the small bowel lining. However, NCGS shares many of the same symptoms with celiac disease such as gas, bloating, and diarrhea. It is also much more common than celiac disease. There is no test for NCGS so, because they share common symptoms, celiac disease must first be ruled out through formal testing for celiac disease. This is where your husband is right now. It should also be said that some experts believe NCGS can transition into celiac disease. I hope this helps.

      My husband has had lactose intolerance for his entire life (he's 68 yo).  So, he's used to gastro issues. But for the past year he's been experiencing bouts of diarrhea that last for hours.  He finally went to his gastroenterologist ... several blood tests ruled out other maladies, but his celiac results are suspect.  He is scheduled for an endoscopy and colonoscopy in 2 weeks.  He was told to eat "gluten free" until the tests!!!  I, and he know nothing about this "diet" much less how to navigate his in daily life!! The more I read, the more my head is spinning.  So I guess I have 2 questions.  First, I read on this website that prior to testing, eat gluten so as not to compromise the testing!  Is that true? His primary care doctor told him to eat gluten free prior to testing!  I'm so confused.  Second, I read that celiac disease is genetic or caused by other ways such as surgery.  No family history but Gall bladder removal 7 years ago, maybe?  But how in God's name does something like this crop up and now is so awful he can't go a day without worrying.  He still works in Manhattan and considers himself lucky if he gets there without incident!  Advice from those who know would be appreciated!!!!!!!!!!!!

      In this case the beer is excellent, but for those who are super sensitive it is likely better to go the full gluten-free beer route. Lakefront Brewery (another sponsor!) has good gluten-free beer made without any gluten ingredients.

      Welcome to the forum, @catsrlife! Celiac disease can be diagnosed without committing to a full-blown "gluten challenge" if you get a skin biopsy done during an active outbreak of dermatitis herpetiformis, assuming that is what is causing the rash. There is no other known cause for dermatitis herpetiformis so it is definitive for celiac disease. You would need to find a dermatologist who is familiar with doing the biopsy correctly, however. The samples need to be taken next to the pustules, not on them . . . a mistake many dermatologists make when biopsying for dermatitis herpetiformis.
