SERIOUSLY awesome banana bread, here goes. Makes 2 loaves.

1 cup sorghum flour

1 cup arrowroot starch

1 cup buckwheat flour (or quinoa flakes)

1 tsp salt

1 1/2 Tbsp baking powder

2 tsp baking soda

1 1/2 tsps xanthan gum

6 eggs

6 very ripe bananas, I freeze mine and thaw, they're sweeter

1/2 cup honey, more if you like it sweeter

but OMG. I have every kind of flour you can imagine but..........except those first three ingredients! I am tryign to use up what I have, what should I do?????????????????????????

My Stinker, God rest her soul, ran a veeeeeeeeeeeeeeerry successful trenching and excavation business in the back yard for her first two to three years........I'm not talking just......digging holes........oh no. We are talking furrows.....caverns........deep, long, connected ruts.....tunnels......nearly the whole grass obliterated and gone. Just a continuous maze of deep ruts and furrows and mud and dirt and holes.

<there were times I did want to bash her little triangular dingo head in>

but.......the cuteness and the charm and the intelligence and the companionship and the snuggling love......she had my heart from the first second I saw her, in her cage.

Just remember the cuteness factor - it goes a long way.
