i made apple cheese danish on saturday and it turned out so good! i had never made this even before my girls were gluten free. i get so excited everytime we make something new and it turns out.

Please, please, please share the recipe! My DH almost cries when he passes Entenmanns cheese danish, but no gluten in my house at all.. I would love to find a danish that he would eat.. I think he would be eternally grateful!!

I made a cherry pie yesterday and it turned out great! I should say I made a crust. I used a can for the cherry pie filling. I would be happy to share (it's from a book, are there laws against that if you post the author and title?) :huh:

here it is---sorry i took so long!!! this recipe is from roben ryberg's book "the gluten free kitchen".

i did not list the fruit topping they used in the book, it was just a fresh peach cut up and cooked with sugar, cornstarch and water until thick. i used my homecanned apple pie filling to top the danish with. i think that any fruit pie filling or jam would work great on this. i think i want to try raspberry jam on this. these things spread out pretty big and the dough is really soft after it is cooked.

ingredients:

2 tablespoons shortening

1/4 cup honey

1 egg

1 tablespoon yeast

1/2 cup sour cream

1/4 cup potato starch

3/4 cup corn starch

1/4 tsp. baking soda

1 tsp. baking powder

1 tsp. xanthan gum

1/2 tsp. salt

1/2 tsp. vinegar

for cheese topping:

3 oz cream cheese

5 tablespoons powdered sugar

preheat oven to 350 degrees. combine all ingredients and mix to remove all lumps.

place approx. 1/4 cup of dough in a small oval on greased baking sheet. flatten to 1/4 in. repeat until all dough is used.

place a rounded spoonful of cream cheese mixture and a spoonful of fruit on top of each danish. bake approx. 15 minutes, until golden brown.

i'll have to find where it is tucked away. it is a pretty good recipe and cooks up really thick just like the store-bought stuff.---if i don't post it soon, just send me a pm and remind me!! my brain is like a sieve sometimes.

These we SOOO GOOD!!! I made them this am and they are great! But I think next time I'm going to make them smaller....had to cut them in half before I could even pick them up!!! Woops! :D Definelty put down more the 1/4 cup!LOL

These danishes are incredible!!! I made a double batch and I used cherry preserves for the fruit topping. WOW!!! I don't think it could have possibly tasted any better!!! These would be good without the fruit topping as well with just the cream cheese mixture. They would also be great with just the fruit topping and a light icing drizzled over them.

For those of you that haven't made these yet... MAKE THEM!!! They are amazing!!!

      thank you RMJ! That is very helpful advice. Good to know we aren’t crazy if we don’t do the endoscopy. We are going to try the gluten free and see how symptoms and levels improve.    thank you Wheatwacked (love the username lol) that is also reassuring. Thankfully she has an amazing and experienced pediatrician. And yesss I forgot to mention the poop! She has the weirdest poop issues.    How long did it take y'all to start seeing improvement in symptoms?

      My son was diagnosed when he was weaned in 1976 after several endoscopies.  Given your two year old's symptoms and your family history and your pediatrition advocating for the dx, I would agree.  Whether an endoscopy is positive or negative is irrelevant.   That may happen even with endoscopy.  Pick your doctors with that in mind. In the end you save the potential trauma of the endoscopy for your baby.   Mine also had really nasty poop.  His doctor started him on Nutramigen Infant because at the time it was the only product that was hypo allergenic and had complete nutrition. The improvement was immediate.

      So her tissue transglutaminase antibody is almost 4x the upper end of the normal range - likely a real result. The other things you can do besides an endoscopy would be: 1.  Genetic testing.  Unfortunately a large proportion of the population has genes permissive for celiac disease, but only a small proportion of those with the genes have it. With family history it is likely she has the genes. 2.  Try a gluten free diet and see if the symptoms go away AND the antibody levels return to normal. (This is what I would do). Endoscopies aren’t always accurate in patients as young as your daughter. Unfortunately, without an endoscopy, some doctor later in her life may question whether she really has celiac disease or not, and you’ll need to be a fierce mama bear to defend the diagnosis! Be sure you have a good written record of her current pediatrician’s diagnosis. Doing a gluten challenge for an endoscopy later in life could cause a very uncomfortable level of symptoms.   Having yourself, your husband and your son tested would be a great idea.

      here are the lab ranges.  Normal ranges for tissue transglutaminase are: <15.0 Antibody not detected > or = 15.0 Antibody detected normal for endomysial antibody is < 1.5. So she is barely positive but still positive.

      I have been diagnosed with coeliacs disease today after endoscopy, bloods and CT scan. I have also been diagnosed with Mesenteric Panniculitis today. Both of which I believe are autoimmune diseases. I have been told I will need a dexa scan and a repeat CT scan in 6 months. I had not even heard of Mesenteric Panniculitis till today. I don’t know much about it? Has anyone else got both of these.
