Would anyone have a really good gluten-free beer batter recipe that I can use for fried shrimp, onion rings? I have purchased the Redbridge beer, and really like it!! Have only been cooking gluten-free for about a month, and miss the fried shrimp.

Mike Eberhart has a wonderful beer batter for onion rings but Iuse it for all my deep frying now. He has a blog, a website & you can buy his cookbook at Suretalentbooks.

Today on the ultimate with Tyler Florence on the Food network ,he made onionrings with rice flour maybe about 2 cups, l tablespoon of baking soda and l table spoon of baking powder salt and pepper and I used gluten-free beer. Dredge the onion in rice flour then in the batter. I did it twice to keep the breading on better, they turned out pretty well. I think the real recipe, not just the eyeball method that I use is on the food network ....I've waited 2 years for an onion ring.....pretty good, I also looked up the blooming onion sauce from outback. It was about a half cup mayonnaise , 2 Tablespoons of ketchup, horseradish about 2 T. salt pepper , paprika, and cayanne pepper. Oh what a night.... :P

??!?!??!? WHAT?!?!?!? not for saucing the cook? jeez...! thanks a ton! Wisconsin Badger game Saturday and I need some good ole' down home munchies! Can't sit at the bar and eat them so i am making the mozzarella sticks i saw here and the onion rings, chicken tenders, and fries....maybe some mushrooms w/ the same batter!

I have Mike Eberhart's book and unfortunately am lactose intolerant so can't use the recipe. My mouth waters just looking at the photo of the onion rings. His book is excellent...am so glad I purchased it.

Just yesterday I tried this batter and my wheat eating husband couldn't stop raving about it. I used Redbridge beer and tilapia fish fillet. I will try this on shrimp and cut back the dill weed and use Old Bay seasoning, and will also do onion rings. Success at last!! I drained the fish on newspapers....very absorbant...the way the English do.Open Original Shared Link

Has anyone substituted rice dream with a few drops of vinegar in it for buttermilk used in a beer batter recipe?

Based on recipe's on the web I just made up my own. Started with all purpose gluten-free flour and seasoning (added onion powder, garlic powder and cayenne). Then mixed in redbridge beer until I had a "pancake" consistency. I then let the mixture sit for a few hours. Loved it!

      Hi, I posted before about my son's legs shaking after gluten. I did end up starting him on vit b and happily he actually started sleeping better and longer.  Back to my 4 year old. She had gone back to meltdowns, early wakes, and exhaustion. We tested everything again and her ferritin was lowish again (16) and vit d was low. After a couple weeks on supplements she is cheerful, sleeping better and looks better. The red rimmed eyes and dark circles are much better.   AND her Ttg was a 3!!!!!! So, we are crushing the gluten-free diet which is great. But WHY are her iron and vit d low if she's not getting any gluten????  She's on 30mg of iron per day and also a multivitamin and vit d supplement (per her dr). That helped her feel better quickly. But will she need supplements her whole life?? Or is there some other reason she's not absorbing iron? We eat very healthy with minimal processed food. Beef maybe 1x per week but plenty of other protein including eggs daily.  She also says her tummy hurts every single morning. That was before the iron (do not likely a side effect). Is that common with celiac?

      Hi @Atl222 As @trents points out, there could be many reasons for this biopsy result.  I am interested to know, is your gastroenterologist concerned?  Also, are your blood tests showing steady improvement over the years? I remember when I had my last biopsy, several years after diagnosis, mine came back with with raised lymphocytes but no villous damage, too! In my own case, my consultant wasn't remotely concerned - in fact, he said I might still get this result even if all I ever did was eat nothing but rice and water.   My coeliac blood tests were still steadily improving, albeit slowly, which was reassuring.

      Welcome to the celiac.com community, @Atl222! Yes, your increased lymphocytes could be in response to oats or it could possibly be cross contamination from gluten that is getting into your diet from some unexpected source but not enough to damage the villi. And I'm certain that increased lymphocytes can be caused by other things besides celiac disease or gluten/oats exposure. See attachment. But you might try eliminating oats to start with and possibly dairy for a few months and then seek another endoscopy/biopsy to see if there was a reduction in lymphocyte counts.
