Need Some Food Suggestions

my diet is very limited now. after getting tested for food allergies i have to cut out dairy, eggs, gluten, soy, ginger, mustard and most nuts. right now im eating mostly chicken, turkey, salmon, shrimp, avocados, gluten-free cornbread (made w/o eggs), sweet potatoes, red potatoes, rice, quinoa, green beans and spinach. im getting very board with these foods but feel better when i keep my dishes simple. anyone have suggestions? id appreciate your help

Here is a quick dish for plain old chicken.

Chicken Breasts skinned & deboned (4 halves)

1 pkg Lipton dry onion soup mix. 2c. brown rice (not instant), 2 cans swanson gluten-free chicken broth, 1/4 c oleo ( melted).

Pat dry chicken. Place rice in baking pan ( I use a stainless pan) add onion mix. Place chicken on top & pour broth & oleo on top , cover & bake until most of the liquid asborbed & chicken is cooked. You can add salt & pepper to the chicken if you wish.

I serve with peas & a salad.

You can sub tofruitti products for you dairy products. They make sour cream ,cream cheese & ice cream froom tofruitti. We love it....

Based on your list you might be able to make the following:

Spegetti sauce with meat - Brown ground meat, dried onion, salt and pepper and Italian Spices. Add in 8 oz of tomato sauce and 4 oz of water per 1/2 to 3/4 pound of meat. Add more Italian Spice, garlic powder, salt and pepper to taste.

Simmer for about 30 minutes.

Chili - Brown ground meat, dried onion, salt and pepper and Chili Powder. Add 1 can pinto beans, 8 oz tomato sauce and 4 oz of water per 1/2 meat. You can modify this to your preference of the amount of meat to beans and thickness of chili you want. Then add salt, pepper, chili powder and garlic powder to taste. Simmer for about 30 minutes. Thicken with a small amount of white rice flour when cooking is completed.

Both can be served over rice pasta or rice.

It actually looks like a pretty good list of healthy stuff. You could add more vegetables and beans and salads to round it out.

Can you eat hummus, using carrot sticks and other veggies to pick it up?

Can you find corn tortillas to make wraps and sandwiches?

How about using chicken broth (Swanson regular is safe) to make soups out of some of these ingredients for a little variety, like chicken noodle with broken gluten-free pasta or vegetable beef?

I don't see beef or pork - you could add those if you like them.

You could find gluten-free waffles for breakfast (check the labels for dairy and eggs).

Bush's or B & M baked beans are nice as a side dish or just a quick lunch with a corn muffin.

Other kinds of beans make interesting and filling hummus-like dips when you mash them up with garlic or other seasonings.

Try refried beans and salsa on corn tostadas.

Make tacos without cheese.

How about stir frying some of your meat and vegetables? Cut up chicken or pork bite-size and stir fry with shredded carrots, cabbage (napa or bok choy work well), bean sprouts, season with something like sweet and sour sauce.

Sausage dishes, risotto with onions and veggies and meat (leaving out the cheese).

Cook chicken in the slow-cooker with interesting sauces and serve over your grains.

Look through Atkins or South Beach cookbooks for lots of meat and veggie recipes.

I'll bet you could make gluten-free rice crispie treats with the right cereal.

Your list might feel limiting to you, but it's full of healthy food and I'm sure you can safely expand it with help from this group. Try looking through the recipes on this site for ideas for livening up what you can eat.

So can you eat things like lettuce, radishes, cucumbers, peppers, tomatoes, celery? Salads are a good option if you're able to handle raw veggies. Add a simple oil and vinagar dressing with a few herbs or spices in it and you're set. You can also include boneless chicken stripes or shrimp in your salads. Or you can cut out the lettuce part all together and just do a crudites of fresh cut veggies. Are you all right with potatoes? You can do wonders with potatoes from twice baked, to home made french fries or quarters.

How about making your own chicken wings???

I use chicken drumettes, marinate them in: BBQ, I make a poultry rub(poultry seasoning and water) various other things. Just marinate for atleast 8 hrs and cook.

Tofruitti is made from tofu..... I buy it at whole Foods where it is one thing that is cheaper for me there. Our kids love the wildberry tofruitti ice cream ( well not ice cream in milk but they do not know it is not the real deal because it tastes so darn yummy!!!

They also make bars frozen too but the trofruitti ice cream sandwiches are of course off limits....

I'd make some tacos, even if you don't want to eat corn shells/tortillas.

What about some homemade soup? Think Crock Pot.

Turkey meatballs made with brown rice crumbs (can be purchased).

Here are a couple of things you might want to add.

Chicken stuffed peppers, it's very quick and adds a lot of flavor. One or two boneless chicken breast sliced thin, added to about a TBls of olive oil and chopped onion. Allow the chicken to cook long enough for all the pink to be removed. Add about 1/4 c. wild rice and 1 can of green chilies and tomatoes adding all the juice. Cover and simmer to reduce the liquid and cook the rice. Seed 1-2 green peppers and stuff with the above mixture. Place in a baking dish and cover bake at 350 for about 45 min. I usually allow to cool slightly before serving.

Also try using a mixture of bean flour and Old Bay Seasoning for coating Fish Iie: Talopia, orange roughy or catfish), Pan sear until crisp. Very tasty

Good luck and just keep experimenting.

Tofutti is made of soy and the OP can't have soy. There is a Vegan Rice cheese that is good. The only drawback I can think of is that it comes in slices. Slices are fine for sandwiches, but if you want it to melt on pizza or nachos, you need to break it in pieces.

I make pizza on Ener-G rice pizza shells. I put peppers and onions on mine as a topping. Daughter likes ham, Canadian bacon or pepperoni.

For nachos, I usually use some chips that contain chia seeds for added protein and fiber. I top them with canned refried beans, then pieces of the rice cheese, then nuke until cheese begins to melt. I then add sliced green onion, black olives, chopped tomato and plenty of fresh salsa. Sooo good!

We also eat a lot of hummus. You can use gluten-free pretzels, breadsticks, chips or raw vegetables to dip in it.

If you can tolerate herbs, fresh or dried, this can make a big difference with flavor in all of these same foods you can eat, and break up some of the boredom for you.

For example instead of just eating grilled/baked chicken you can marinate it in a little olive oil, lemon juice, garlic, and fresh or dried rosemary and then slow roast it in the oven or grill it. Turkey and salmon can be prepared the same way with different herb marinades or homemade spice rubs.

Also, change up the way you prepare things. Like instead of a baked sweet potato, try peeling them and slicing them in wedges, toss with a little olive oil, sea salt, and orange zest and bake in the oven until tender. Or peel them, boil, and mash for a sweet potato puree.

I like to make home fries with red skinned potatoes, wash, cut, toss with a little olive oil and sea salt and bake until tender.

Salads and pilafs can be made with the rice and quinoa (i.e toasted almonds, or whatever nut you can have, unsweetened dried cranberries perhaps?)

With turkey, I make up taco meat for Mexican dishes (with cumin, garlic, chili powder), meatballs for Italian dishes (with italian seasonings and chopped spinach) , and hamburger patties (with onion, garlic, and mustard powders), all from ground turkey. Turkey tenderloins are also an option, great cuts of white turkey meat that you can roast. You can do the same with ground chicken as the ground turkey too.

If you can have cornbread I assume you can have corn and there are a lot of possibilities with corn. If you can find basic vegetarian tamales in your area, free of gluten of course and cheese and other dairy ingredients (usually they are just corn meal). Polenta is also an option. Corn tortillas.

Your meals can still be simple and fresh, AND taste good.

Meatloaf! Um, avocado on your salad is good. Tuna on salad, or with pasta. Baked apples with raisins and honey in the empty center. We just had turkey breast roasted in honey muatsrd sauce with mashed butternut squash and peas for dinner. Hint: for turkey, go heavy on the mustard.......

Edit: Sorry, just caught the mustard thing! Maybe homemade barbecue sauce?

      That and my nutritionist also said that drinking cider is one of the worst drink choices for me, given that I have candida overgrowth.  She said the combination of the alcohol and sugar would be very likely to worsen my candida problem.  She suggested that if I drink, I go for clear vodka, either neat or with a splash of cranberry.   So in summary, I am giving ciders a rest.  Whether it's a gluten risk or sugars and yeast overgrowth, its just not worth it.

      While plain, pure tea leaves (black, green, or white) are naturally gluten-free, the issue often lies not with the tea itself but with other ingredients or processing. Many flavored teas use barley malt or other gluten-containing grains as a flavoring agent, which would be clearly listed on the ingredient label. Cross-contamination is another possibility, either in the facility where the tea is processed or, surprisingly, from the tea bag material itself—some tea bags are sealed with a wheat-based glue. Furthermore, it's important to consider that your reaction could be to other substances in tea, such as high levels of tannins, which can be hard on the stomach, or to natural histamines or other compounds that can cause a non-celiac immune response.
