Too Many Prunes! Need Recipes Using Prunes.

I find myself with nearly 2 lbs of dried, pitted prunes (unopened packages, thankfully!)

Anyone have a reciepe or two that would be good for using these up?

Baked goods

Desserts

with vegetables? (not sure that would work, but who knows)

anything else?

Appreciate any suggestions.

save them for colder weather and make fruit compote, with dried apricots, apples, prunes etc. simmered in a liquid to rehydrate, I don't have a recipe but there are some out there, probably could do it in the crockpot too, serve with whipped "cream" or ice"cream"

You got me on this one, we just eat em straight cuz we like em! Or use them in food bar stuff, like with nuts and seeds.

Didn't somebody wrap prunes in bacon and broil? Or was that something else?

Pork tenderloin stuffed with prunes

Stick a long thin knife through the pork tenderloin to make a cavity and stuff full of prunes. Season outside with salt, pepper, and dust with rice flour.

Brown on all sides in olive oil in a very hot pan.

Set pork aside and add 1 tablespoon butter and 1 chopped onion to the pan.

Saute until onions are golden and translucent and stir in 1 teaspoon sage.

De-glaze the pan with 1 cup apple cider, scraping up all the browned bits, throw in a handful of prunes, grate in the zest of 1/2 a lemon, return the pork and cover.

Cook just until the tenderloin is almost cooked through, a little pink is good.

Serve with mashed sweet potatoes and smothered greens.

You can always chop 'em up and put them in baking. Delicious in pierogies, too.

Yep. That was me. I ate three of them this AM. Wrap each one with some prosciutto, stick with a toothpick and bake at 400 until crispy. I also do them on a skewer on the grill. You will thank me for this one. Just don't eat too many at one time :D

      What you’re describing is actually very common, and unfortunately the timing of the biopsy likely explains the confusion. Yes, it is absolutely possible for the small intestine to heal enough in three months on a strict gluten-free diet to produce a normal or near-normal biopsy, especially when damage was mild to begin with. In contrast, celiac antibodies can stay elevated for many months or even years after gluten removal, so persistently high antibody levels alongside the celiac genes and clear nutrient deficiencies strongly point to celiac disease, even if you don’t feel symptoms. Many people with celiac are asymptomatic but still develop iron and vitamin deficiencies and silent intestinal damage. The lack of immediate symptoms makes it harder emotionally, but it doesn’t mean gluten isn’t harming you. Most specialists would consider this a case of celiac disease with a false-negative biopsy due to early healing rather than “something else,” and staying consistently gluten-free is what protects you long-term—even when your body doesn’t protest right away.

      Yes, I meant if you had celiac disease but went gluten-free before screening, your results would end up false-negative. As @trents mentioned, this can also happen when a total IGA test isn't done.

      I found at Disney springs and Disney they have specialist that when told about dietary restrictions they come and talk to you ,explain cross contamination measures tsken and work with you on choices. Its the one place I dont worry once I've explained I have celiac disease.  Thier gluten free options are awesome.

      Have you tried Pure Encapsulations supplements? This is a brand my doctor recommends for me. I have no issues with this brand.
