My 8 year old daughter needs English Muffins for a class recipe for the end of school party.They are making English Muffin Pizzas in school. I have found 2 that fall part when they are defrosted. Can any one help with a suggestion. Thanks. We live in Brooklyn New York

We have had good results with the Glutino English Muffins, although we have never tried to make a pizza out of them.

Ds likes bagel pizzas, on the Glutino bagels, if I remember right. I like the flavor of the Foods by George french bread rollls but they are a bit crumbly.

Edit: It wasn't Foods by George rolls that I was thinking of. The brand that I was referring to was Gillian's.

This is the recipe I use for english muffins. You will need circle cookie cutter rings or muffin rings to make it.

3/4 cup Bob's Red Mill All Purpose Flour

1/2 cup white rice flour

1/4 cup cornstarch

1 teaspoon xanthan gum

1/2 teaspoon salt

1 tablespoon sugar

1 tablespoon yeast

1 teaspoon canola oil

3/4 cup + 1 tablespoon warm water

Spray the pan with nonstick spray and dust with white rice flour.

Mix water, yeast, sugar and oil in a bowl.

In a seperate bowl, mix reamining ingredients. Mix all into one bowl with a mixer on high for 2 minutes.

Spoon into pans. Cover and let rise for 20 minutes.

Bake in a 375 degree oven for 15 minutes.

I agree with Joan's gluten-free Great Bakes....they are the best! I think you can order them on line and they have a store in Bellmore on Long Island.

I like the Kinnikinnick ones, which are easily available here...not sure about New York. BTW, how will they be handling the baking? Will her food be cooked separately? Or will everyone be using gluten free english muffins?

Many people have suggested the Joans gluten-free Greatbakes English Muffins to me. I am going to try to find them in Manhattan ,near work. Her muffins are going to be placed on aluminum,under the broiler, instead of the toaster.She is the only gluten-free kid in her class . Thanks for the responses

Trader Joe's carries outstanding gluten-free, casein-free english muffins. toasted with butter they taste as good as i remember thomas'. and handily enough - there's a new Trader's in Brooklyn, on Court and Atlantic. Plenty of other great gluten-free items there as well...

THANK YOU TO ALL WHO RESPONDED.I PURCHASED JOAN''S gluten-free GREAT BAKES ENGLISH MUFFINS AND GLUTINO. THERE IS NO COMPARISON AS FAR AS I AM CONCERNED.THE JOAN'S IS THE MOST LIKE THOMAS I HAVE EVER HAD EXCEPT FOR THOMAS. MY DAUGHTER LOVES LOVES LOVES THEM.

THE SHIPPING WAS HIGH BUT WELL WORTH IT.

WE WILL BE USING THEM FOR HAMBURGER BUNS THIS SUMMER AS WELL AS THE LITTLE PIZZA

I love Joan's too. I buy in bulk every few months! I've given them to a few non-celiac friends and they also think they are great. Joan's is a real winner.

      What you’re describing is actually very common, and unfortunately the timing of the biopsy likely explains the confusion. Yes, it is absolutely possible for the small intestine to heal enough in three months on a strict gluten-free diet to produce a normal or near-normal biopsy, especially when damage was mild to begin with. In contrast, celiac antibodies can stay elevated for many months or even years after gluten removal, so persistently high antibody levels alongside the celiac genes and clear nutrient deficiencies strongly point to celiac disease, even if you don’t feel symptoms. Many people with celiac are asymptomatic but still develop iron and vitamin deficiencies and silent intestinal damage. The lack of immediate symptoms makes it harder emotionally, but it doesn’t mean gluten isn’t harming you. Most specialists would consider this a case of celiac disease with a false-negative biopsy due to early healing rather than “something else,” and staying consistently gluten-free is what protects you long-term—even when your body doesn’t protest right away.

      Yes, I meant if you had celiac disease but went gluten-free before screening, your results would end up false-negative. As @trents mentioned, this can also happen when a total IGA test isn't done.

      I found at Disney springs and Disney they have specialist that when told about dietary restrictions they come and talk to you ,explain cross contamination measures tsken and work with you on choices. Its the one place I dont worry once I've explained I have celiac disease.  Thier gluten free options are awesome.

      Have you tried Pure Encapsulations supplements? This is a brand my doctor recommends for me. I have no issues with this brand.
