Besides high fiber fruits (esp. pears, apples, oranges), vegies (esp. brocolli, brussel sprouts, green beans), legumes (esp. kidney, black, lentils), I add rice bran to hot cereals, soups, spaghetti sauce or whatever can be thickened. Also check the fiber content of whatever gluten-free breads you buy. Look for at least 3 grams of fiber per slice.

Lentils - ~16g/cup

Black beans and pinto beans - ~15g/cup

Kidney beans, garbanzo beans, and lima beans - ~13g/cup

Green peas - ~8g/cup

Blackberries ` ~7g/cup

Pumpkin - ~7g/cup

Broccoli - ~5g/cup

Pears - ~5g/each

Sugar snap/snow peas - ~5g/cup

Sweet Potato - ~5g/each

Carrots - ~5g/cup

And that's without touching a single gluten free grain.

I've incorporated flax into my diet--lots of good fiber and a great source of omega 3's.

I think those may be chia seeds.

You have a whole new life - no need to follow the rules of eating imposed by anyone else. Fiber, and in fact all of your nutrition, can come from natural whole foods. No need to stay stuck in the mindset of 'fortified food'.

Did you have constipation as one of your gluten intolerance symptoms? If so, did the constipation decrease after you went gluten free? If not, constipation could also be caused by (1) other food allergies influencing constipation; (2) bacterial dysbiosis (low good bacteria which promotes bowel motility; or (3) opportunistic or pathogenic bacteria, parasites or even candida.

I had chronic constipation before I was diagnosed with celiac disease and began to abstain from gluten. I ate loads of fiber, drank lots of liquids and even took regular magnesium and vitamin C, which helped a little. Then I was diagnosed with and began to abstain from 6 additional food allergies. Abstaining from all those foods also helped a little, but not enough to be totally 'regular'. However, diagnoses and treatment for 4 bacteria, one parasite and candida AND taking mucho probiotics during and after treatment FINALLY resolved my life long constipation problem. I still eat lots of fiber, because I feel fuller sooner and stay unhungry longer, when I eat high fiber foods, but I'm not totally dependent on a high fiber diet for regularity, like I was before I eliminated all my other gut problems.

Sue,

How did you treat your bacteria and parasites? I had (or still have) bad bacteria. I tried berberine and licorice to treat it and had severe reactions to both.

My doctor said to increase my probiotics to have enough good bacteria to overcome the bad. A couple months after that, I tested positive for candida. I figured after taking such a high dose of probiotics, that I wouldn't have candida. How did you get rid of the candida and how long did that take?. I am taking garlic every day, eating no sweeteners or dairy besides butter.

I have been reading up on candida and it is advised to go off all grains, peanuts, starchy vegetables and fruits. If I do that, I really won't have enough left to eat to maintain my weight. I need to gain weight and not lose any more.

A friend of mine said she got rid of candida while eating grains, fruits and starchy vegetables.

As far as I know, there is no science behind giving up all those foods to get rid of candida and I personally don't believe in that. Take the probiotics and garlic, but if your candida is bad enough the only way to get rid of it is antifungal medicines. You cannot severly limit your diet that much when you are healing from celiac.

This is very encouraging. My test indicated that I had mild candida albicans. I'm hoping that it was mild that I am ridding myself of it. I don't know if it is causing any of my symptoms. I did read that it can cause insomnia which is still a problem for me.

I don't know how big a problem candida is really. But I have read that caprylic acid is supposed to help with it and it is found in coconut. You can also buy caprylic acid pills to take.

Have you tried Pure Encapsulations supplements? This is a brand my doctor recommends for me. I have no issues with this brand.

plant sources of calcium, such as spinach, have calcium bound to oxalates, which is not good. best source of calcium is unfortunately dairy, do you tolerate dairy? fermented dairy like kefir is good and or a little hard cheese. i do eat dairy, i can only take so much dietary restriction and gluten is hard enough! but i guess some people do have bad reactions to it, so different for everyone.

i take b12, folate, b2, b6, glycine, Nac, zinc, vk2 mk4, magnesium, coq10, pqq, tmg, creatine, omega 3, molybdnem (sp) and just started vit d. quite a list i know.  I have high homocysteine (last checked it was 19, but is always high and i finally decided to do something about it) and very low vitamin d, 10. have been opposed to this supp in the past, but going to try it at 5k units a day. having a pth test on friday, which is suspect will be high. my homocysteine has come down to around 9 with 3 weeks of these supplements and expect it to go down further. i also started on estrogen/progesterone. I have osteoporosis too, so that is why the hormones.  anyway, i think all celiacs should have homocysteine checked and treated if needed (easy enough with b vit, tmg). homocysteine very bad thing to be high for a whole host of reasons. all the bad ones, heart attack , stroke, alzi, cancer..... one of the most annoying things about celiacs (and there are so many!) is the weight gain. i guess i stayed thin all those years being undiagnosed because i was under absorbing everything including calories. going gluten-free and the weight gain has been terrible, 30#, but i'm sure a lot more went into that (hip replacement - and years of hip pain leading to inactivity when i was previously very active, probably all related to celiacs, menopause) yada yada. i seemed to lose appetite control, like there was low glp, or leptin or whatever all those hormones are that tell you that you are full and to stop eating. my appetite is immense and i'm never full. i guess decades or more ( i think i have had celiacs since at least my teens - was hospitalized for abdominal pain and diarrhea for which spastic colon was eventually diagnosed and had many episodes of diarrhea/abdominal pain through my 20's. but that symptom seemed to go away and i related it to dairy much more so than gluten. Also my growth was stunted, i'm the only shorty in my family. anyway, decades of malabsorption and maldigestion led to constant hunger, at least thats my theory. then when i started absorbing normally, wham!! FAT!!!

Great advise there I agree with the aniexty part, and the aura migraine has I suffer both, I've also read some great books that have helped I'm going too look the one you mentioned up too thankyou for that, I find a camomile tea just a small one and a gentle wind down before bed has helped me too, I suffer from restless leg syndrome and nerve pain hence I don't always sleep well at the best of times , racing mind catches up I have decorated my whole house in one night in my mind before 🤣 diet changes mindset really help , although I have to say it never just disappears, I find once I came to terms with who I am I managed a lot better  , a misconception is for many to change , that means to heal but that's not always the case , understanding and finding your coping mechanisms are vital tools , it's more productive to find that because there is no failure then no pressure to become something else , it's ok to be sad it's ok to not sleep , it's ok to worry , just try to see it has a journey not a task 🤗
