Really is great when our family starts to see improvement themselves from our healthier diets.  Funny...even my kids are saying that they ate this or that at their friends homes or out and about and it just doesn't taste as good as it used to.

Oh Welcome to the dinner chat - glad you stopped in - come back anytime -- we are always open ;)

Welcome, 28in4dave!  Glad to have you here.  :)   I am definitely with you on the fresh thing.  I make nearly everything from scratch including BBQ sauces, ketchups, mustards, all sorts of preserves, sauces, pesto, etc.

Tonight we are grilling thick bone-in pork chops that I brined, olive oil-rubbed baked potatoes (with bay leaves and garlic in between the halves) and spicy Japanese cucumber salad.  Oh, and something with strawberries - I will probably make shortcakes.

Welcome to the chat!

We are not crazy on here, We are not crazy on here. We are not crazy on here. (if we repeat it often enough, we believe it  )

Some of us (meaning me) call them "encores"..not leftovers....as in, it is so good, you want an "encore"....okay, that's probably only funny to me.

Anyhoo...

YO SKI!

I am making your quickie baked beans version and the house smells fabulous!! will make a great impression when they come to gawk tomorrow at the showing.

Country Ribs from the butcher--done in a homemade BBQ sauce plus mango juice--also simmering slowly in there. Some cole slaw on the side.YUM

I also confess to drinking champagne right now  because...WHOOHOO..we signed the building loan for the house !

meanwhile all this cooking is being done while the air conditioners are running BECAUSE IT IS AN UNREAL 93 HERE IN NYS...meanwhile, in FLA -- it is a lovely 80 today.

Shroomie is laughing at me right now, I know she is. :D

last night we 'lobster boiled' (with corn and potatoes) as celebration - only have the oldest and her hubs and adorable grand daughter once a year due to the USAF - so we splurged (or so it started out) i actually ended up with a deal after the fish counter guy over charged me.  i pointed out his mistake and he was so afraid of trying to get the live lobsters back out of the bag to re-weigh them, he charged me 2.99 per lb lolz i guess if you want to win at negotiating, take a lobster!!

tonight is special request shrimp picatta w/parslied potatoes and strawberry salad.  <grew the strawberries i am soooooo excited :D

whaa! whaa!

and a whoot! whoot! on the signing the loan docs :)

toddling off to refill the whine--- oh I mean wine -- ya it was that type of day

but i got a b%$@#in little chair raft when combined with my little rainbow unbrella makes an adorable image as a float in my salt water pool -- not...but I don't give a damn.

dinner was steak with zucchini and red onion served poolside by my personal cabana man-- sorry just can't picture hubs as cabana boy.

the men are off cycling "critical mass" -- hundreds of cyclists take over the city streets while I sit home and worry -- at least the son that recently decided he no longer needed a helmet...left with helmet in hand...I slipped him five bucks and said I am willing to bribe him to protect his melon... if he is stupid enough to not want to.  I'm sweet that way

edited to add....

Did someone say BACON>>>>>Dancing_Bacon_by_mrmaiden23.gif

I ended up with too much sun yesterday, and fell asleep on the couch. Mr Mindwarp woke me up for chicken and rice.

I am starting a whole30 again today, but I have stayed pretty clean since my 1st one in January. So, no rice or white potatoes, and cutting down on nuts and dried fruit. The weight loss slowed, and I still have around 45lbs to go.

More sun today :) (maybe not too much though...)

w8in4dave Community Regular

I had a steak and some left over potatoes :) We ate late so hubbs had spaghetti Mindwarp are you on the Paleo diet? Just wondering, my daughter is on that.

Celiac Mindwarp Community Regular

Hi w8in,

Yes, it is a version of paleo. It has turned my life around since January. How is your daughter getting on with it?

Dinner tonight was Thai green curry. My 1st since gluten-free last September. It was divine. Been about 6 hours and so far so good....

In all the time I spend here, my husband has never noticed the bacon before. Last night he looks up and gets this "look" in his eyes and is like.... "I want dancing bacon" in the most pathetic adorable way.

I know it is unoriginal at this point and I probably sound like a broken record, but we're doing burgers tonight. I'm sure I'll think of something to have with them.

In exciting news, I went to the store Thursday night and wondered down a frozen aisle which never happens and noticed an entire shelf of Genius bread with a price label of $1.50. I grabbed my husband and was like, does that really say a buck and a half? I've seen people say this is good bread, but for all I'm spoiled in the city have never seen it before so I grabbed a loaf. I went back yesterday for 5 more. :D

IrishHeart Veteran

My Mom LOVES the genius bread. I have not had it yet--not available here. Enjoy!!

I LOVE burgers( I admit it) and we had them tonight with asparagus on the grill. It's 93 dang degrees here.

and I had BA-CON on those BEANS last night and all is well in the land. (so.....that's eggs, beans, toms  and bacon I got back ...............so, whoohooo!!! )  The End.  :D

I had a waffle today :)

There was more bread than I could count Thursday night. When I went back Friday afternoon there was maybe a dozen loaves left. The tag said close out sale so I am assuming that now that I found it and love it I will never buy any again. :( I suppose I should get over this because it is as nutritionally useless... where the bread I get at Costco has a veritable butt-ton of fiber. I just couldn't pass up such a good deal on bread that when I got it home tasted so much like.... BREAD!!!! (I have only had it as toast so that is the only opinion I have of it so far but omg I almost died when I popped that first piece.)

Anyway, to the reason I popped back in here. I was goofing off poking around yahoo a bit and found an absolute gem of a recipe that I just had to share. I think I just found the best ever summer BBQ recipe that will knock the socks off everyone invited. Bacon wrapped burgers. Not like I've seen before where they wrap a piece of bacon around the outside of a burger... no, this is serious business. Cut lengthwise to work better and basket weaved bacon wrapped burgers. I'm in love!

ah, the simple pleasures, eh, Ski?

Still ridiculously and unseasonably hot here today (I like it, but everyone else is whining and complaining already...same people who harp on the snow and cold all winter...) and,

I am thinking chicken on the grill and a big salad wiith some nuts, goat cheese feta, mandarin slices, raspberry vinaigrette (pushing the envelope here with the vinegar, etc, I know...but I am not blown up like the michelin right now. I did however, spring spmething in my right hip that's got me

on ice this morning. Weird because it felt fine when I went to bed. I mean, I was asleep!...so how can I manage to hurt myself? sigh....

I have some chicken to cook for dinner but those waffles sound really good too. Maybe I should have chicken and waffles... B)

Ouch...I've done that many times...ouch...ouch...ouch!

Dinner tonight will be tri-tip with cauli-fried rice -- early so we can all go to the fancy movie theater on the son :)

IH come float with me....sis finally did yesterday -- the salt water system seems to be working...sure smells a heck of a lot better than the old chemical experiment pool.

Celiac Mindwarp Community Regular

Yep, slightly grumbly guts but not intolerance symptoms. I reckon I can do it occasionally.

Hope that hip is better. I am liking the sound of that pool, ski :).

Maybe we should have a pool party?

GottaSki Mentor

I'm off to buy a few more chair rafts...amazing how much fun we can have with a simple little pool -- one bonus is it was perfect temp within a day -- whereas my friends with beautiful built in pools are waiting for the water to warm up -- if i ever do get the beautiful pool...me thinks I'll go shallow and solar -- although I love to dive and always wanted a 9' deep end :D

(and i really want chicken and waffles now)

and we are having:

chicken <no waffles> with wild mushroom & balsamic cream sauce

orzo for the gluten eaters, gluten-free noodles for me

A VEGGIE i told them to get whatever they want

today is my oldest daughter, son-in-law and grand-daughter's last day here - they are afraid to cook in my kitchen so they have been eating take-out food for breakfast and lunch all week.   which works for them because they live in a little town in new mexico that has hardly anywhere to eat out lolz.

GottaSki Mentor

We use Bisquick for Waffles -- Hubs makes them -- I usually do not partake, but yesterday I ate one and it was delicious

Hello all! My life in the last five years has been crazy. I got married in 2020 at the age of 27, pregnant with our first child almost two months later, gave birth in 2021. We had another baby in April of 2023 and our last baby this March of 2025. I had some issues after my second but nothing ever made me think, "I should see a doctor about this." After having my last baby this year, my body has finally started to find its new rhythm and balance...but things started to feel out of sorts. A lot of symptoms were convoluted with postpartum symptoms, and, to top it all off, my cycle came back about 4m postpartum. I was having reoccurring migraines, nausea, joint pain, numbness in my right arm, hand and fingers, tummy problems, hives. I finally went to my PCP in August just for a wellness check and I brought up my ailments. I'm so thankful for a doctor that listens and is thorough. He ended up running a food allergy panel, an environmental respiratory panel, and a celiac panel. I found out I was allergic to wheat, allergic to about every plant and dust mites, and I did have celiac. I had an endoscopy done on October 3 and my results confirmed celiac in the early stages! I am truly blessed to have an answer to my issues. When I eat gluten, my brain feels like it's on fire and like someone is squeezing it. I can't think straight and I zone out easily. My eyes can't focus. I get a super bad migraine and nausea. I get so tired and irritable and anxious. My body hurts sometimes and my gut gets bloated, gassy, constipated, and ends with bowel movements. All this time I thought I was just having mom brain or feeling the effects of postpartum, sleep deprivation, and the like (which I probably was having and the celiac disease just ramped it up!) I have yet to see a dietician but I've already been eating and shopping gluten-free. My husband and I have been working on turning our kitchen 100% gluten-free (we didn't think this would be so expensive but he assured me that my health is worth all the money in the world). There are still a few things to replace and clean. I'm already getting tired of reading labels. I even replaced some of my personal hygiene care for myself and the kids because they were either made with oats or not labeled gluten-free. I have already started feeling better but have made some mistakes along the way or have gotten contamination thrown into the mix. It's been hard! Today I joked that I got diagnosed at the worst time of the year with all the holidays coming up. I will just need to bring my own food to have and to share. It will be okay but different after years of eating "normally". Today I ordered in person at Chipotle and was trying not to feel self-conscious as the line got long because they were following food-allergy protocols. It's all worth it to be the healthiest version of myself for me and my family. I would be lying if I said I wasn't a little overwhelmed and a little overloaded!  I am thankful for this community and I look forward to learning more from you all. I need the help, that's for sure!

On the AIP diet, all processed foods are eliminated.  This includes gluten-free bread.  You'll be eating meats and vegetables, mostly.  Meats that are processed, like sausages, sandwich meats, bacons, chicken nuggets, etc., are eliminated as well.  Veggies should be fresh, or frozen without other ingredients like sauces or seasonings.  Nightshade vegetables (eggplant, potatoes, tomatoes, peppers) are excluded.  They contain alkaloids that promote a leaky gut and inflammation.  Dairy and eggs are also eliminated.   I know it sounds really stark, but eating this way really improved my health.  The AIP diet can be low in nutrients, and, with malabsorption, it's important to supplement vitamins and minerals.

Thank you for responding and for prayers.  So sorry for your struggles, I will keep you in mine.  You are so young to have so many struggles, mine are mild by comparison.  I didn't have Celiac Disease (celiac disease) until I had my gallbladder removed 13 years ago; at least nothing I was aware of.  Following surgery: multiple symptoms/oddities appeared including ridges on fingernails, eczema, hair falling out in patches, dry eyes, upset stomach constantly and other weird symptoms that I don't really remember.  Gastro did tests and endoscopy and verified celiac disease. Re heart: I was born with Mitral Valve Prolapse (MVP) and an irregular heartbeat, yet heart was extremely strong.  It was difficult to pick up the irregular heartbeat on the EKG per cardiologist.  I had Covid at 77, recovered in 10 days and 2 weeks later developed long Covid. What the doctors and nurses called the "kickoff to long Covid, was A-fib.  I didn't know what was going on with my heart and had ignored early symptoms as some kind of passing aftereffect stemming from Covid.  I was right about where it came from, but wrong on it being "passing".  I have A-fib as my permanent reminder of Covid and take Flecainide every morning and night and will for the rest of my life to stabilize my heartbeat.
    • larc
When I accidentally consume gluten it compromises the well-being of my heart and arteries. Last time I had a significant exposure, about six months ago, I had AFib for about ten days. It came on every day around dinner time. After the ten days or so it went away and hasn't come back.  My cardiologist offered me a collection of pharmaceuticals at the time.  But I passed on them.
    • klmgarland
So I should not eat my gluten free bread?  I will try the vitamins.  Thank you all so very much for your ideas and understanding.  I'm feeling better today and have gathered back my composure! Thank you kitty kitty   I am going to look this diet up right away.  And read the paleo diet and really see if I can make this a better situation then it currently is.
