Peachy dessert changed to easy pineapple upside down as I had a pineapple committing suicide on my porch....tomorrow something peachy.

Enchiladas still on...hoping Ill make it to fireworks....all this floating made me sleepy....enjoy for me East Coast peeps!

We had smoked Ribs, smoked turkey breast, hubbs made some other smoked meat so he could have it with sauerkraut (Anyone?) and then we had a big bowl of fruit and a big salad!! And there were 10 adults and 8 children! Ohhh cup cakes and cheese cakes and a chocolate thing , cucumber salad!! :) It was a very good day!! Happy Birthday USA!! Yea by the way the younger kids thought it was my birthday!! I said Ok it's my birthday where are my gifts? Colton 4, said I will be your gift!! Awweee out of the mouths of babes! :) Of course I said ok you can be my gift!! :)

It's been too hot to do serious cooking so last night I made Thai lettuce wraps with grilled (and brined) shrimp, homemade sambal olek and nuoc cham, shredded carrot, cucumber, vermicelli noodles.  That sort of thing.

 

Tonight we are grilling again.  We are having grilled thick-cut bone-in pork chops with a Greek-inspired wet rub, roasted Greek lemon dill potatoes and Caesar salad with homemade torn croutons and unctuous dressing with anchovies et. al.  Maybe grilled halloumi if my husband picks some up.  Oh, and I nearly forgot - grilled Parmesan, chipotle and lime corn on the cob.  Not fresh from the garden as the corn in these here parts is about 6" tall.

 I live in an area full of immigrants and we have more than half a dozen hispanic markets here and in the next city over... I still had to call 4 before I found one that isn't out of fresh guavas. <_< I actually had the store by my house tell me they could order guavas for me for $7.99 a lb. I told him I'd think about it. Are these people aware that there are all these hispanic markets locally selling the same thing for 1/4 of the price?

 

I stopped for milk while I was out and found fresh local corn so corn on the cob is for supper, with a pork loin. I could still kiss whoever thought up cooking those suckers in their bags. I'll probably make myself some mashed taters because the potatoes in the pantry are looking like they just sat through a week of 100+ degree weather that the A/C didn't quite do enough for. At least they're mostly gone. (Note to self: just because 15 lb. bags of potatoes are cheap, does not mean you need 15 lbs. of potatoes.)

mw, they were hootenannying into the night here!   rednecks and fireworks........  we spent the night at our friends on the river, where the neighbors were taking turns blowing stuff up.  we went from the back porch to the front porch and back to watch all the 'shows' lolz

awwh!  i am missing 3 out of 4 of our grandbabies - the (omgosh he can't be that old) soon to be 10 yr old and one of our 4 yr old grandsons live 8 hrs away, and the 2 y.o. granddaughter lives 30 hrs away.  and then the last 4 y.o. grandson lives in the backyard lolz, the next street over.  what a cute story - enjoy your babies!!!  :)

Made it to fireworks -- up on the rooftop...we can see several coast displays...IF the smoke gets blown out to sea -- ah ya -- this is kinda like ol' puxatony phil -- the smoke rarely gets blown out to sea -- yet to be up on the roof while my men are trying not to blow injure themselves with short fused fire crackers is something I have missed these past 4 or 5 years -- was a blast -- especially like the patriotic music in sync to the fireworks...guess i should check if there is a music sync to our nightly display from SeaWorld!

 

Tonight is steak and asparagus and those little cheese bread ball deals that Addie posted awhile back -- strangely I am graving little round dough balls for some reason today ;)

 

Tomorrow we'll have about 30 young adults for burgers &/or vegan chili -- son is hosting yet another house show -- this time ALL acoustic for two reasons 1) to give our poor neighbors a break 2) he knew it was too soon to ask me for another plugged in show -- smart kid!

I use lots but this is what I used the other night:

 

3 cloves garlic, minced

3 T ch fresh mint, cilantro or basil (I used mint and cilantro)

1 t dried oregano

1 t ch fresh rosemary

1 1/2 t capers

1 t coarse sea salt

1 T freshly ground black pepper

1 1/2 c dry vermouth

grated zest and juice of 2 lemons

1/4 t Tabasco sauce

1/2 c extra virgin olive oil

 

Combine all but oil in food processor blender.  Process until blended.  Drizzle in oil while blending.  Marinated shrimp 2-4 hours  Also good on scallops.

Tonight we're having creamy vege pasta made with coconut cream, pumpkin, zucchini, tomatoes, mushrooms, capsicum, onion, sweet potato and chives, using San Remo rice pasta spirals.  No idea about tomorrow night.  It's the last night of the Winter school holidays, although it's far from cold here, I'm in a singlet and shorts at the moment and it's mid-winter.  Was thinking of "bangers and mash" with the gfv sausages we bought the other day.

So I went to the kitchen to make start dinner and it seemed dark. Then I looked out the window at the thermometer and noticed that the sky was BLACK! It was still about 90 then. In the space of half an hour the temp dropped 25 degrees and it rained some. (People here probably thought the sky was falling, but I grew up where it rains, this didn't look like it could soak a person in under 3 seconds so it wasn't pouring.) Most impressive was the thunder and lightening. It only lasted about half an hour but the storm passed right over us and it was enough the for a good 10 minutes in the middle of the storm the house kept shaking with every crack. I guess somewhere deep down I have sympathy for people afraid of storms, but I was just loving every second of it. I went out when it was over and enjoyed some time on the back steps smelling the rain and the whipping wind blowing. (It only took 5 minutes for the steps to be dry, love the desert!)

 

I even still managed to get dinner ready on time! I did baked instead of mashed potatoes due to the lack of effort needed. They got crispy just fine with a little appropriate TLC.

I went to the farmer's market today and found beets with their greens still on them. Not a particularly common occurrence around here. I thought I would give the greens to my bunny, but have decided to see if I can tolerate them. I haven't had anything green and leafy besides plain old lettuce in a year and it is making me crazy. I'll probably still give the bunnikins at least half, spoiled princess that she is. I also picked up fresh corn, some green onions, some fresh basil (because I kept talking about planting some but apparently I'm all talk) and some honey sticks for the hubs. There was also a food stand with ice cold San Pelligrino! I indulged, because I really do think it is a crime against humanity that every store in two cities seems to have Perrier (ew!) but not San Pelligrino cold.

 

So tonight for dinner will be recycled pork roast (see, I'm not calling it leftovers!) with roasted beets, sauteed beet greens and corn on the cob. As long as all goes well with the greens, I'll be into my homemade mint chocolate chip ice cream for dessert. (Which is also what is for lunch.)

I admit to liking Pellegrino water and occasionally, I have seen cases of it on sale at BJs. (not sure if you have access to one of those?).

I occasionally indulge in a whole case from Costco when they're on sale. My husband thinks I'm spoiled, I tell him I just like the good stuff. :D I generally stick with the bottles, because I have no business drinking the flavored ones with citrus juice in them. I was pushing my luck this morning with a blood orange one, my favorite! It didn't disagree with me though so it looks like those are in my safe citrus limit YAY!

 

Your pizza sounds like heaven. I'm almost drooling on my computer.

 

I make sure every day I do something fun. It doesn't have to be spectacular, like last night it was just simply enjoying 10 minutes out in the rain cooled air. Idk, a meteor could fall out of the sky tonight and land on my bed. I decided at the beginning of this year that I got robbed too much with this stupid disease and I could die tomorrow of some senseless tragedy or plain stupidity. I won't go with regrets, no matter my age. ^_^

This sounds like me when I had to give up cheese. I wasn't so pissy about all the other things, but cheese? You have got to be freakin KIDDIN me! I thought nothing of going throw 10-15 pounds of cheddar, 5-10 of mozzarella and 5-10 of assorted other cheeses in a month. For two people! And I was probably eating 3/4 of that, if not more. I never considered my cheese habits to be a problem. :P All I wanted for a month was to stand in the kitchen, stamp my food like a toddler and yell "I want macaroni and cheese!" and pout accordingly.

 

I've discovered now that fresh cheese and I can be bestest buds. I eat fried queso fresco, fresh sliced mozz, ricotta and have discovered a whole new love for goat cheese. I had goat milk once and it was nasty, so I assumed I'd hate the cheese... never been more wrong in my life! You do learn to adapt once you learn what cheese will be your friend.

      I am so sorry you're going through this. It's completely understandable to feel frustrated, stressed, and disregarded after such a long and difficult health journey. It's exhausting to constantly advocate for yourself, especially when you're dealing with so many symptoms and positive diagnoses like SIBO, while still feeling unwell. The fact that you have been diligently following the diet without relief is a clear sign that something else is going on, and your doctors should be investigating other causes or complications, not dismissing your very real suffering.

      It is just so sad that health care in the United States has come to this.  Health insurance should be available to everyone, not just the healthy or the rich.  My heart goes out to you.  I would not hesitate to have the test and pay for it myself.  My big concern would be how you could keep the results truly private.  I am sure that ultimately, you could not.  A.I. is getting more and more pervasive, and all data is available somewhere.  I don't know if you could give a fake name, or pay for your test with cash.  I certainly would not disclose any positive results on a private insurance application.  As I understand it, for an official diagnosis, an MD needs to review your labs and make the call.  If you end up in the ER, or some other situation, just request a gluten free diet, and say it is because you feel better when you don't eat gluten.      Hang in there, though.  Medicare is not that far away for you, and it will remove a lot of stress from your health care concerns.  You will even be able to "come out of the closet" about being Celiac!

      Yes, I've posted a few times about two companies: Request a Test and Ulta Labs. Also, pretty much we can all request any test we want (with the possible exception of the N protein Covid test and I'm sure a couple of others) with Lab Corp (or Pixel by Lab Corp) and Quest. I much prefer Lab Corp for their professionalism, ease of service and having it together administratively, at least in DC. And just so you know, Request a Test uses Lab Corp and Quest anyway, while Ulta Labs uses only Quest. Ulta Labs is cheaper than Request a Test, but I am tired of dealing with Quest, so I don't use them so much.

      PS - I think you meant this site, but I don't believe it has been updated in years: http://glutenfreedrugs.com/ so it is best to use: You can search this site for prescriptions medications, but will need to know the manufacturer/maker if there is more than one, especially if you use a generic version of the medication: To see the ingredients you will need to click on the correct version of the medication and maker in the results, then scroll down to "Ingredients and Appearance" and click it, and then look at "Inactive Ingredients," as any gluten ingredients would likely appear there, rather than in the Active Ingredients area. https://dailymed.nlm.nih.gov/dailymed/
