If you go to the store to buy fresh mint it is $3-4 for a teensy bit, I figure I have easily $100 worth of mint in my yard right now. And it is probably 500 kinds of illegal to sell it. <_< We have a market here that sells things like that, but there is all sorts of licensing and crap. At least once I have it as extract and oil it will be far easier to use. Heck, I can even use the oil to just make the house smell good. ^_^

Got a text yesterday afternoon asking me to sub today. Sure, what could possibly go wrong working on a Monday right? Well it turns out I hadn't left my house all weekend, not since Friday, so I didn't know what was waiting for me out front when I left my house. I was all set to head off to work this morning and hopped in my Jeep only to realize there was something poured all over the driver's side of my windshield.  <_< Looked like soap, stoopid teenagers. I flipped on my wipers and figure I may run out of fluid but this will only take a few minutes and it'll clean right up right? Nope. It was soap poured over motor oil poured over polyurethane. You have got to be f'n kidding me right?  :angry: The worst? Even though I know who did it, the cops said that unless the stupid b%$@# outright admits to it there isn't a damn thing they can do about it.  :angry:  :angry:  :angry:

 

So, instead of showing up to work at 7:30 like I'm supposed to. I was leaving my house at 7:35. I can not even say in words how hard it is to get that crap off of a windshield. Plus I really wish I had an outlet for my anger right now. Instead of being able to headshot a few guys in Fallout and watch them pop cleanly off so I can feel better I am smiling and helping students and being polite, which while this positively angry makes me just a little dead inside. 

 

So... dinner? Psh... l-e-f-t-o-v-e-r-s. I'll make some gravy, pour it over some warmed up roast and veggies. Maybe I'll cook up some squash or something as a late night snack. I've got a couple of teensy little yellow beauties to eat.

most people around here are afraid of us.  that's the way we like it.  (plus my hubs 'boyfriend' <"your boyfriend is texting you"< is the mayor lolz)  and we are armed.  and we both have our carry permit.

I obviously need to make people more afraid of me. There is no law in Utah preventing people from openly carrying so maybe I should just start that. That'll make people a bit scared. Nothing is legally stopping me from shopping at Wal-Mart with a shotgun or a handgun as long as it is openly carried and secure and unchambered. Or you know... concealed with a permit. But that doesn't scare people. Clearly I need to cultivate my scary person attitude/persona. And make friends with our mayor.  :lol: Local primaries are in two weeks, then I can find out who I need to buddy up to.  B)

Forgot what it was.... The PB pudding was so good.

As you can tell my brain is not all the way clear of the flare or gluten that took me out for for over a week...getting there but not all the way back quite yet :blink:

I doubt I'm ever all there so I can hardly fault anyone else for not being altogether there.  :D At least you're getting there. Hopefully all those mens are taking good care of you. What would we do without our mens?  :wub:

I haven't entirely decided yet on dinner. I'm thinking though that it'll be something easy to eat, today was the next to last of my dental work. WOOHOOOOOO!!!!! All I have left is to choose between a bridge and an implant and I'm waiting until next year because I'm at my insurance limit this year.

 

For sure I am thinking cheesebread. Soft, easy to chew, but not chew free so I feel like an invalid. Maybe I'll toss together a last minute meatloaf or something. I feel half starved to death because all I had for lunch was a Chobani. Too close to dinner to truly eat, and not enough self-restraint to simply snack. I need to just keep telling myself that being a little hungry once in a while is not going to hurt me. Or my butt.

 

I already have plans for tomorrow though. BLTs! I'm going to roast my little yellow cherry tomatoes, pop their skins off, mush them, chill them and use that as a spread instead of just plain tomatoes sliced. I have some of that Hormel uncured bacon in the fridge I need to use up. And lettuce of course. Ranch instead of mayo because... well why not! And all on toast. Sounds positively like perfection to me. But tomorrow, when I am more comfortable chewing. :D

tonight I'm cooking pork apple salad with quinoa.  I've just used  a bit of salt and pepper and cut up the pork into squares, then I'm going to cook that with a bit of olive oil, some pecans, broccoli, green pepper, (wish I had green beens etc) then I'll let all that cool down and mix it in with a cut up apple, spinach and some other lettuce and maybe some broccoli slaw. I wish I had some balsamic vinegar because that would be really good reduced.

So I am still on extremely limited Meat, Z- or Sweet Potato Spirals with Veggie meals which is boring and have not helped the men cook their food in over a week...

 

but I did make a twist on my old Chocolate Mousse Recipe -- trying to limit even Choc for a bit -- Hubby walked in and asked what I was making but I had no idea...it is now called "Snickerdoodle Mousse" -- will need some adjustment, but it wasn't bad...didn't set in the frig so the remainder will be "Snickerdoodle Ice Cream" tonight.

Cinnamon - went light as I couldn't remember...but fairly sure this is a Histamine

 

Next batch will likely be simply Vanilla Mousse.

Huh...how does the Chicken Skin react with you?  Since I've given up so many other things - stealing Crunchy Chicken Skins has before meat hits the table has become a guilty pleasure for me.

      I got beaten so bad playing dominoes that made me realize that I was probably eating something with gluten, the culprit (Simms premium cracked pepper STEAKSTRIP). Now I can look back and see all other symptoms: irregular stools, bad sleep, desire to eat uncontrollably, bad mood, etc. Gluten really does a job on my short-term memory.

"The Wolff-Chaikoff Effect:   Crying Wolf?"   Last year I started taking 600 mcg a day and it is reversing my glaucoma and fixing muscle tone, hair nails and skin all returning to healthy,  Brain fog, which had improved dramatically on Gluten Free diet, my thinking got even clearer with the iodine. Finally the cyst my bellwether since 2014, began to heal.  So I had it biopsied  in July 2025, came back basal cell carcinoma.  With the Iodine (Piping Rock Liquid Iodine 12 drops a day 😃 = 600 mcg) is healing normally and I have a follow up in December.  By then it will have healed.  It is scabbing over like a normal wound.  In 1970 the US stopped using Iodine as a dough modifier.  The daily intake of Iodine dropped in the US 50% between 1970 and 1984.  Also, prescriptions for thyroxine have doubled.  150 mcg the RDA is not enough for anything more than preventing goiter.  Growing up in the sixties just 2 slices of bread had 200 micrograms of iodine, add a glass of milk and iodized salt and you're at 300 mcg a day.  The safe upper tolerable limit in the US is 1000 mcg.  In Japan it is 3000 mcg and the average Japanese, traditional diet, averages above 1000 mcg.  Remember when in the 80's our schools were loosing competitions to Japanese schools?  Iodine.  And Japan has 50% less breast cancer.  Nicer hair nails and skin.  It the US our kids are getting dumber, more flabby.  Fertility is dependant on enough iodine, also. 600 mcg.
