My sweetheart is taking me out for dinner tonight! This is an especially big deal because I have not gone out to eat in months, since the diagnosis and being low iodine just makes it really hard (plus I was terrified of all food for the first month or two). I am absurdly excited. We are going to a restaurant that just opened this year and is 100% dedicated gluten free (2 out of the 3 owners have gluten and other food intolerances, so they are very accommodating and understanding) They also source most of their ingredients locally, which I appreciate. Did I mention that I am excited?! I am even going to have a leetle glass of wine and might wear a dress. Crazy.

 

It's called The Brooklyn House, if anyone is ever in Portland, OR looking for a safe place to eat.

 um, a dress? what's that?   wine--now, that I am familiar with.

I managed today to get my chicken marinating at a reasonable time. So we'll have honey balsamic chicken, probably a salad and I'm sure I'll think of something else.

 

I went shopping today and scored honeycrisp apples for 98 cents a pound. They are by far the most perfect apple ever, so I'll probably blow through all 4 pounds before the weekend is over and have to go buy more. I've been known to pay as much as 3.50 a pound for one in the middle of winter when I have a terrible craving and I'm alone at the store and my husband isn't there to look at me like I've lost my freakin mind. :ph34r: "Can't you just buy a different kind of apple?" As if he thinks there is such a thing as an apple that is a replacement for a honeycrisp. And he thinks I'm the crazy one!

 

Oh... and I managed to score free tickets to the Expo today so woohoo more spending money while I'm there! :D

I don't think I made a very clear sentence. I should have said that today I won free tickets to the gluten-free Expo.... which happens not to be until Saturday. Anywho, I will have tons of fun when I go. :D

Lots of local businesses have been having facebook contests the past few weeks to give away tickets. I've been trying to win some and failing miserably until today.

I picked up some lamb chops on sale and some salmon. I'm trying to decide which to eat tonight and which to eat tomorrow. I know I can't reasonably eat both tonight but right now that seems like the most sensible option because choosing just seems like the most difficult thing in the world! Whatever I decide, I'm sure I'll come up with some sort of appropriate side to go with it.

 

I have to go pick up my tickets at the store this evening but didn't think about that until after I put my hair up in pin curls for tomorrow. I guess I'm going out of the house in pin curls with a scarf on my head like it's the 50's or something. At least my husband is at work because he would probably be having some sort of heart attack about me being a redneck. :lol: (I've also been known to go to the drugstore, while sick, in the middle of the afternoon in my jammies... gawkers be damned.)

I've done the "jammers run" when I lived in the country and no one noticed. They all had jammers on too!.

Today I went out with my stepmom to Genghis Grill.  If you guys haven't heard of it it is a chain, mongolian stir fry.  You go put whatever meat and veggies you want in a bowl and they cook it up for you.  They are allergy friendly in general, will go cook your bowl in a clean skillet in the back instead of on the main grill they do everyone elses on.  Also pretty healthy and reasonably priced.  Yum Yum.  Tomorrow I will roasting a whole chicken in the crock pot (mine has a temperature probe thing) and making a broccoli, cheese, chicken, and rice casserole on Sunday with the leftover breast meat.

For dinner tonight I had lentil and bacon soup with a brown gluten free roll , just opened the can easy peasy

Fruit cocktail also in a tin ,

the soup was really good it was Baxters , they do a lovely chicken broth too

Tonight we're having salmon. It'll probably be a quick and easy pan fry with simple sides. Last night's lamb was melt in your mouth perfect, which is good because it was my husband's first lamb chops. :o He probably thinks I'm a freak now though because I gnawed every last bit of meat off the bone like an animal. :ph34r:

 

I'm off for the day. The expo starts at 9, but the first 1000 people in line get entered in a contest to win $1000 so I'm all for lines in the cold today! Yes... I nave a sweater mom. :P Depending on who is speaking and at what times I may only be there a few hours or I may stay all day until 5. The expo is only a few blocks from Eleanor's, my first gluten free bakery I found which also happens to be the one that makes arepas. So if I stay all day and can't gorge myself enough on samples I can dodge out for a sandwich. Or I may just stop in for one on the way home (or some cupcakes or brownies or cakepops or.....) just because I can.

Thank you! It was a really fun night. I was so nervous when I got to the restaurant and saw "sourdough" and "pasta" on the menu that I flagged down the server to double check. It happened to be the same woman I had corresponded with prior to going. She assured me that they are indeed, 100% gluten free. I felt a huge wave of relief and settled in for what turned out to be a lovely, cozy and romantic dinner. *swoon*

Just a leeeetle excited. How could ya tell? :P I actually wore nice jeans and a blouse, but I did put on teal suede wedges. Woot! (I know this may not seem like a big deal but I you all had seen what I'd been wearing for the last 6 months you'd understand.)

I am a Honeycrisp apple fanatic, too! There is no more perfect apple, IMO. I scored a big bag of spotty ones the other day and thought I'd make some applesauce with 'em. Nom!

 

Dinner tonight: I'm not sure yet. I've got a bunch of leftover pork and thought I might just make some tortillas and do easy tacos with cabbage slaw? But I also scored a bunch of duck feet and necks today and they are simmering on the stove with carrots onion and celery and will be magically turned into stock in a few hours...hmmm.

Tonight is pizza spaghetti casserole. My husband usually hates casseroles, and if he doesn't like it he can oven himself some stupid chicken patties or something. I found the recipe and it looks delicious so he can just deal with it. It's basically just spaghetti in a casserole dish with pepperoni on it, what isn't to love?

no, lolz, i haven't heard him since - the house was built in 1896, so, some of the noises i blame on the ghosties.  i have made friends with them ;)  as i am here by myself alot!   i volunteered to be a tour guide on the ghost (home) tour, so i am going to find out what sort of ghosts my neighbors all have hahaha  :D

 

now, I want calzone. :D

adds - i feel ya, sistah - we just got back from trashin' around nashville - holy guacamole i feel like i'm 100..........

 

if i can't get/make a calzone, i'm gonna fake some pork bbq.  i have been smelling it for days and nobody could tell me what was in it.  on the up side, i ate at wildhorse saloon (so far, so good - i had an apple blt sammich - they will make most of their sammiches on gluten-free bread, EVERYTHING BUT THE BBQ - grrrrr.....)  and also wasted away again in margaritaville (they had redbridge, so, hells yah!)  friday night i drank chardonnay because the honky tonk we were at didn't have any gluten-free beers <if i ever had any doubts that i can never drink wine again, they are gone, along with some of my dignity lolz oh, well, i can't be a *perfect* a-hole all the time hahahaha)  so i have now developed a way to drink my bards in establishments that do not provide gluten-free beer.  sort of a 'bait and switch' if you will.  nothing up my sleeve.........  PRESTO!   bards.

We're having a rotisserie chicken, coconut rice and sauteed chard (next to kale, I  :wub:  chard)

 

and tonight and I just cannot help but also have a vodka, seltzer and and orange slice. (or 2). I can. I'm a grown -up.

we still are eating dinner between 6:30 and 7..... so no "old people early dining"  yet.

Someone is having a good night!

 

I'm a grown -up.

 

I still feel weird saying this as justification for doing things. I act like I'm 5 as much as I act my age so I'm not sure I should be allowed to say it. I also play more video games than most teenagers.

 

So, I stopped at Wal-Mart for the cheese I need for dinner, which is dangerous because I should never be allowed in that store alone. For some reason I meandered down the baking aisle, it still draws me like a moth to a flame. And they had a zoo animal Jello Jiggler mold with a giraffe! There are other animals and stuff but w/e. GIRAFFE! So naturally I bought one. Like I said, I shouldn't be allowed in that store alone. I have absolutely no self control. My husband is going to tell me I didn't need it. But obviously he doesn't know what he's talking about. Now I can eat giraffe shaped jello instead of blob shaped jello. Totally worth $3.

      Hey there, have you been tested for allergies? You may not only have celiac disease but be allergic. I have celiac disease and am allergic to Barley, wheat and rye.

      I have osteopenia and have cracked three vertebrae.  Niacin is connected to osteoporosis!       Thank you so much for the clarification! Yes to these questions: Have you consulted dietician?  Have you been checked for nutritional deficiencies?  Osteoporosis? Thyroid? Anemia?  Do you take any supplements, or vitamins? I’m within healthy range for nutritional tests, thyroid and am not anemic. I do have osteopenia. I don’t take any medications, and the dietician was actually a nutritionist (not sure if that is the same thing) recommended by my physician at the time to better understand gluten free eating.    I almost wish the gluten exposure had triggered something, so at least I’d know what’s going on. So confusing!    Many thanks!

      @JudyLou,  I have dermatitis herpetiformis, too!  And...big drum roll... Niacin improves dermatitis herpetiformis!   Niacin is very important to skin health and intestinal health.   You're correct.  dermatitis herpetiformis usually occurs on extensor muscles, but dermatitis herpetiformis is also pressure sensitive, so blisters can form where clothing puts pressure on the skin. Elastic waist bands, bulky seams on clothing, watch bands, hats.  Rolled up sleeves or my purse hanging on my arm would make me break out on the insides of my elbows.  I have had a blister on my finger where my pen rested as I write.  Foods high in Iodine can cause an outbreak and exacerbate dermatitis herpetiformis. You've been on the gluten free diet for a long time.  Our gluten free diet can be low in vitamins and minerals, especially if processed gluten free foods are consumed.  Those aren't fortified with vitamins like gluten containing products are.  Have you consulted dietician?  Have you been checked for nutritional deficiencies?  Osteoporosis? Thyroid? Anemia?  Do you take any supplements, medicine, or vitamins? Niacin deficiency is connected to anemia.  Anemia can cause false negatives on tTg IgA tests.  A person can be on that borderline where symptoms wax and wane for years, surviving, but not thriving.  We have a higher metabolic need for more nutrients when we're sick or emotionally stressed which can deplete the small amount of vitamins we can store in our bodies and symptoms reappear.   Exposure to gluten (and casein in those sensitive to it) can cause an increased immune response and inflammation for months afterwards. The immune cells that make tTg IgA antibodies which are triggered today are going to live for about two years. During that time, inflammation is heightened.  Those immune cells only replicate when triggered.  If those immune cells don't get triggered again for about two years, they die without leaving any descendents programmed to trigger on gluten and casein.  The immune system forgets gluten and casein need to be attacked.  The Celiac genes turn off.  This is remission.    Some people in remission report being able to consume gluten again without consequence.   However, another triggering event can turn the Celiac genes on again.   Celiac genes are turned on by a triggering event (physical or emotional stress).  There's some evidence that thiamine insufficiency contributes to the turning on of autoimmune genes.  There is an increased biological need for thiamine when we are physically or emotionally stressed.  Thiamine cannot be stored for more than twenty-one days and may be depleted in as little as three during physical and emotional stresses. Mitochondria without sufficient thiamine become damaged and don't function properly.  This gets relayed to the genes and autoimmune disease genes turn on.  Thiamine and other B vitamins, minerals, and other nutrients are needed to replace the dysfunctional mitochondria and repair the damage to the body.   I recommend getting checked for vitamin and mineral deficiencies.  More than just Vitamin D and B12.  A gluten challenge would definitely be a stressor capable of precipitating further vitamin deficiencies and health consequences.   Best wishes!
