Arabian Stew

This is one of my all time favorite recipes. Easy, simple ingredients and excellent for company too.

I doubt it is Arabian though. :)

Other than baking I don't usually measure so if you have questions on amounts just ask.

To be eaten with turmeric rice.

Arabian Stew

About one pound lamb stew meat (beef works too)

Brown the lamb or beef

Add about one can whole tomatoes and juice

Add about 20 peppercorns

Simmer until meat is tender

Add canned, frozen or fresh green beans (about 2 cups?)

Simmer till beans are warm or done.

Add some salt if you like.

Turmeric Rice

One cup Basmati rice

2 cups water

I onion, chopped

I heaping TBSP turmeric

Salt

Saute onion until soft (butter, marg or oil)

Add turmeric and gently saute for a minute or two

Add rice and saute, stirring for a couple minutes

Add water and salt to taste and bring to a boil, cover, turn heat to minimum and simmer for about 20 minutes or until done.

Bonus, this dish looks beautiful too.

Thanks so much for this recipe! We had this dish at an ethnic festival. I didn't know the name. I tried to make a version of the stew, but just served it over plain rice.

I'm looking forward to trying the real recipe. :D

I got this recipe 40 years ago in Highschool Home Ec class.

The turmeric rice makes all the difference.

Yes Ma'am...it is pretty authentic. :)

Here is my version.

I make a huge pot.

5 pounds of ground beef

Shoulder roast cut into 2 inch cubes (I use 3 pounds)

One carton Kitchen Basics Chicken Stock.

One can tomato paste

One pkg Shan Spices (Biryani, Dopiaza, whatever you have, I've tried them all-just read the label because once in a while one will contain wheat.

No browning or frying...just dump it all in a big pot and stir then bring it up to temp and then simmer on low until the meat is tender.

I've made this without the Shan spices too and it works great. Just use whatever spices you have

I serve it with Basmati rice

2 cups Basmati Rice soaked for 30 minutes in cold water.

Rinse well and drain.

Add exactly 2 cups of water and microwave for 10 min.

Done. My son eats this all week long. Sometimes I add chicken breast too.

I will put the Turmeric in next time. I usually just use a dash of it to make the rice yellow...but that sounds good.

The lamb is authentic! They definitely eat a lot of it. :)

I love to add pomegranate molasses to many Arabic/Syrian/Turkish dishes. It is fabulous and underutilized.

Pom. molasses sounds wonderful. I will try some.

If I have leftover turmeric rice (rarely) I will have it with some swiss chard sauteed with garlic.

The other versions sound interesting too, I will have to try them. Glad everyone is enjoying it.

I'm trying this for dinner tonight. It sounds so good in this cold weather. :)

I did and it was wonderful. I personalized it a bit, with turmeric in the stew with smoked paprika, and some chicken bullion in the rice w/ turmeric.

Neighbor friends for dinner loved it! Me too! :D Leftover tomorrow.

I just made a batch with deer meat and beef. So anything goes. It can also be made with all chicken if some folks don't eat beef. Can't remember if you are from New Zealand or Australia...but I bet you can put some Kangaroo meat in there and it would be great! :D

Is it the tomatoes you can't have in this recipe, Shroom??

Maybe there is a way around the tomato paste--another thickening agent---anyone???

Well, I have run out of tomato paste....and I just make it without tomato paste. It's still yummy. Really!

And when I suspected nightshades I decreased the tomato part and then eliminated it. I love the dish even without tomato paste. Another thing I do is put whole peeled garlic cloves in there without crushing or anything. They turn soft like roasted garlic. Yum. That might give you another level of flavor if you can't have tomato.

I don't know what those "spices" contain - possible legumes, chili, paprika, lemon juice??? apart from the tomato problem :rolleyes:

      Dang......did it again and yeah I should admit I am 63 with clumsy phone thumbs. I started feeling better quickly and a doctor a year later said I had to eat  poison (gluten) every day for a month so he could formally diagnose me and NO FREAKING WAY. I couldn't then and can't imagine putting my body through that crap (no pun intended) on purpose ever again.  Why ingest poison for a month to have some doctor say Hey, All you Have To Do Is Never Eat poison Again..

      It seems like you have two choices--do a proper gluten challenge and get re-tested, or just go gluten-free because you already know that it is gluten that is causing your symptoms. In order to screen someone for celiac disease they need to be eating gluten daily, a lot of it--they usually recommend at least 2 slices of wheat bread daily for 6-8 weeks before a blood screening, and at least 2 weeks before an endoscopy (a colonoscopy is no used to diagnose celiac disease). Normally the blood panel is your first step, and if you have ANY positive results there for celiac disease the next step would be to take biopsies of your villi via an endoscopy given by a gastroenterologist.  More info on the blood tests and the gluten challenge beforehand is below: The article includes the "Mayo Clinic Protocol," which is the best overall protocol for results to be ~98% accurate. Here is more info about how to do a gluten challenge for a celiac disease blood panel, or for an endoscopy: and this recent study recommends 4-6 slices of wheat bread per day:   Not to discourage you from a formal diagnosis, but once you are diagnosed it may lead to higher life and medical insurance rates (things will be changing quickly in the USA with the ACA starting in 2026), as well as the need to disclose it on job applications. While I do think it's best to know for sure--especially because all of your first degree relatives should also get screened for it--I also want to disclose some negative possibilities around a formal diagnosis that you may want to also consider.

      Yes.  Now, if you hit your finger with a hammer once, wouldn't you do your best not to do it again?  You have identified a direct connection between gluten and pain.  Gluten is your hammer.  Now you have to decide if you need a medical diagnosis.  Some countries have aid benefits tgat you can get if you have the diagnosis, but you must continue eating a gluten-normal diet while pursuing the diagnosis. Otherwise the only reason to continue eating gluten is social. There are over 200 symptoms that could be a result of celiac disease.. Celiac Disease and Non Celiac Gluten Sensitivity  both cause multiple vitamin and mineral deficiency.  Dealing with that should help your recovery, even while eating gluten.  Phosphatidyl Choline supplements can help your gut if digesting fats is a problem,  Consider that any medications you take could be causing some of the symptoms, aside from gluten.
