  9. i really miss cheese. haven't had much success with cheese substitutes. i have only ever had 2 things made with goat's cheese that i liked - a cheesecake made with half cream cheese, and half goat's cheese, and mashed potatoes with a little goat's cheese. any suggestions for good recipes? i tried it on a pizza the other day, and ended up picking all the pieces...

  15. This is my favorite chocolate cake ever! I've made it several times, and it rocks! I made Black Forest Chocolate Cake with this as the base for my birthday last fall. I brought it to work, and everyone had seconds! The cake by itself though is great, really moist and flavorful! Open Original Shared Link (to see pics of the cake I made for my b-day, you...
  16. Technically, I'm not a librarian. But I did volunteer for 2 semesters at my state hospital's library for a psychology class. I loved it! I also worked as a reading tutor for 3 years at a couple elementary schools. I love YA fiction as well. Just got a box in the mail from my mom, and it was a bunch of my old books! Fun stuff! Anyway, just wanted to say...
  17. So, I came down with a sore throat on my last day of vacation (btw, was just sitting at home for the whole week), and had to go back to work Monday completely miserable. Work has been slam packed, so I couldn't take any (more) time off. Anyway, sore throat turned into sinus congestion and a fever on Monday night. Thankfully broke Tuesday night, but now turned...
  18. This is a great way to get things done. I usually do most of my cooking (especially baking breads, pancakes and muffins to freeze and use throughout the week). It helps to have a couple things going at the same time to get more done, such as crock pot, oven, stovetop... I definitely agree with this one! I'm only cooking for two, but still, with a busy...
  19. I used to get glutened all the time at the office I used to work at. What I did to help reduce that risk is lay a paper towel down on the microwave and put my tupperware on top of it. I wouldn't handle anything (open the door, push the numbers, grab the tupperware) with my hands, used a paper towel to do it all. Then I'd clean a spot on the counter where...
  20. yummy! the kids look like they're enjoying them i have a similar recipe from one of my cookbooks (Williams-Sonoma's gluten-free cookbook, I think), it's a peanut butter cookie with chocolate chips. Just uses peanut butter instead of the chips. Might have to try this recipe...definitely in a cookie mood!
  21. Open Original Shared Link here's a link to some comments about portland restaurants. i didn't lie when i said i had the best meal of my life at mccormick's. but, hm, wonder how they could make that work being lactose intolerant. i ought to find that out, for myself as well, for my next trip out there.
  22. that's probably what I'm gonna do. they always like it when i get on a baking kick!
  23. Yet another successful meal thanks to the recipe from my favorite gluten-free cookbook "Life Tastes Good Again" (Open Original Shared Link). I've made them twice, once with turkey, once with beef. Served the beef balls over spaghetti, and minus the meatball sauce. Yum! Pictures can be viewed on my blog (see profile).
