ARCHIVED 'new York Style' Foldable Pizza Crust
BFreeman replied to hangininthere's topic in Gluten-Free Recipes & Cooking Tips
What size pizza pan did you use? I would love to try this tonight. -
ARCHIVED Peanut Butter.... Any One.... Skippy..
BFreeman replied to zachsmom's topic in Gluten-Free Foods, Products, Shopping & Medications
I am sad to report they no longer make the chocolate peanut butter, though! It was soooooo good! Do you like/have you tried Nutella? I think it would be similar to chocolate peanut butter. I put it on Redenbacher popcorn cakes and have to discipline myself not to eat too many of them. BF -
ARCHIVED Pizza
BFreeman replied to missy'smom's topic in Gluten-Free Foods, Products, Shopping & Medications
Do try this crust recipe; I think it is SO good. (And easy too!) Mix together 1 tbsp. yeast, 2/3 cup bean flour, 1/2 cup tapioca starch, 2 tsp. xanthan gum; 1/2 tsp. salt; 1 tsp. Knox plain gelatin powder, 1/2 tsp. sugar, and 1 tsp. Italian seasoning. Heat up 2/3 cup plus about 5 tablespoons (more or less) water, add 1 tsp. olive oil and 1 tsp. cider vinegar... -
ARCHIVED What's Easier... The Whole Family Or One Person
BFreeman replied to mommalov's topic in Parents, Friends and Loved Ones of Celiacs
I agree that it depends on the family situation whether the whole house is gluten free or not. In my case, I wanted home to be the one place in the universe that my husband didn't have to stop and think before putting something in his mouth, so I decided the household would be gluten free. (It helps that it's only the two of us now.) He tried to talk me out... -
ARCHIVED What Is Your Favorite gluten-free Recipe?
BFreeman replied to cgilsing's topic in Gluten-Free Recipes & Cooking Tips
I thought imitation crab (do they call it surimi?) was not gluten free. If it is we've been missing out! BF -
ARCHIVED Buffalo Wild Wings-springfield, Mo
BFreeman replied to Mewsic463's topic in Gluten-Free Restaurants
Yes, very much. I knew they used to have a Chick-Fil-A in the mall but I didn't know of any other one and am going to check this out; thanks! BF -
ARCHIVED Buffalo Wild Wings-springfield, Mo
BFreeman replied to Mewsic463's topic in Gluten-Free Restaurants
Mewsic, do you live in Springfield? I'm 2 hours from there and my children live there; we go up shopping several times a year. Is there anywhere else in Springfield that you eat? It would be so nice not to go to Wendy's every time. BF -
ARCHIVED Two Minute Microwave Hamburger Buns
BFreeman replied to hangininthere's topic in Gluten-Free Recipes & Cooking Tips
I didn't have any cottage cheese but did have ricotta because of the person who posted the idea of using it in pancakes (Thank You! They were SO good!) and I couldn't wait to try this recipe so I used the ricotta. I made just half in case they didn't work out (used 1 whole egg and one egg white). They were very good; go ahead and make them with the ricotta... -
ARCHIVED Kc Masterpiece Bbq Sauce?
BFreeman replied to ptkds's topic in Gluten-Free Foods, Products, Shopping & Medications
Look at the heater stand the Wal-Mart rotisserie chickens sit on. The one in our Wal-Mart has a sticker thing on it that says the chickens may come in contact with certain allergens so I never buy those. I also think the Tyson heat-and-eat ones are good. BF -
There is an article in the last Woman's Day magazine about diseases doctors miss--celiac disease was one of them (along with several others), and Dr. Green was quoted. BF

I noticed a one-third page size spot in the newest Gourmet magazine about a company that makes gluten free treats and there was a picture of a row of chocolate chip cookies lined up. (The cookies looked good.) It made reference to a website, gfessentials.com, so I visited there. Mainly it is a site to attract shoppers, but there was a link to a place that...

ARCHIVED Chocolate Swirl Cheese Pie
BFreeman replied to wowzer's topic in Gluten-Free Recipes & Cooking Tips
I made this today and it was very good. (One caveat: Note that the original poster did say a TEN inch pie pan; I thought mine was standard but apparently not because it wouldn't hold everything; I had a smaller, all chocolate cheesecake/pie also (which wasn't necessarily a bad thing; no one knew I also had it so it was all mine . . . .) ARCHIVED How Do We Get Celiac?
BFreeman replied to SanteeBay's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
How exactly do they test for malabsorption and how do the results look? I'm pretty sure we have a calcium malabsorption issue (because of too many cracked ribs) but what would you look for if it was another mineral, or a vitamin? (My question sounds a little off to my ears but I don't have a scientific mind. BF -
Thanks for those ideas Pam. The only thing that really crossed my mind before was plum baby food.

The only muffin recipe I had that I liked was a pumpkin raisin one. I had been trying to think of something with about the same texture as pumpkin that I could substitute in, and I tried making the recipe with vanilla yogurt. Good! (Now I'm wondering about other flavors......) Mix dry ingredients in one bowl and wet ingredients in another; mix them up...

ARCHIVED The Most Delicious Home-made Gluten Free Bread I've Ever Tasted...
BFreeman replied to mamatide's topic in Gluten-Free Recipes & Cooking Tips
Larry do you not have a Whole Foods in your area or do they not carry sorghum flour? My son gets it for me at Whole Foods in Springfield, Mo., and they also have it at Nature's Way in Mountain Home AR (near me). I guess I thought they carried it about everywhere. BF -
We like this recipe halved and made into popcorn bars. I pop a bag of Redenbacher kettle corn (no butter and not much sweet; I haven't made plain popcorn in so long I'm not sure I remember how), then use the whole cup of salted peanuts and about 1 and 1/2 cups of candy (I like the Reese's baking pieces that are like tiny peanut butter cups; putting them in...

I've also used the foccacia to make a dessert or breakafast food by leaving out the herbs. I spread the dough into a rectangle, then sprinkle with cinnamon and sugar. After baking, I cut it into strips and while still warm I drizzle it with icing. Tastes just like what you get at the pizza delivery places.

ARCHIVED 3 Ingredient Peanut Butter Cookies
BFreeman replied to pinktulip's topic in Gluten-Free Recipes & Cooking Tips
I use brown sugar instead of white (1 cup peanut butter, 1 cup brown sugar, 1 egg), add the teaspoon of vanilla and roll them into balls in my hands. I also put chocolate chips in them. Very good. I haven't yet come up with a cookie made with flour that I like but the Eagle milk and coconut (what IS the word for those cookies? senior moment ones are good... -
ARCHIVED Article With Recipes
BFreeman replied to Cynbd's topic in Gluten-Free Recipes & Cooking Tips
Salt? Salted butter? Condiments? I thought the article made it sound like they were all completely off limits. I had never heard of salt being prohibited. (I do buy non-iodized salt though.) BF -

ARCHIVED Emeril's Popcorn M&m Cake
BFreeman replied to VegasCeliacBuckeye's topic in Gluten-Free Recipes & Cooking Tips
Thank you to the person who posted this recipe. I made it into "popcorn marshmallow treats" by halving the recipe and substituting chopped-up Reese's peanut butter cups for the M&M's (I thought the colors in the M & M's would probably smear when the melted marshmallows went on them) and pressed it into a greased 13 x 9 pan. They were very good. ...
