ARCHIVED Making Your Own Pizza Dough And Sauce
bbuster replied to jkmunchkin's topic in Gluten-Free Recipes & Cooking Tips
I make pizza a lot and the dough is very wet. I recently got a pizza stone and it is hard to use, but really cooks the crust well. You'll have to decide if the extra trouble is worth it or not. Put a lot of olive oil on the stone first. Spray a large wax paper with Pam and spread out most of the dough on it, then flip it over onto the stone and... -
ARCHIVED Gluten-free And Not Growing
bbuster replied to CeliacBoys's topic in Parents, Friends and Loved Ones of Celiacs
I don't have an answer for you but I am in almost the exact same situation with my son. We completed diagnosis with positive blood tests and GI scope in early 2005. It took until last summer (testing at 6 month intervals) to get negative bloodwork -- went from stong positive to weak positive to equivocal to negative. He has not been to the doctor since... -
I had LASIK a little over 3 years ago and am so glad I did. Nearsighted, I went from 20:200+ vision to 20:20. Three years later I am 20:20 in one eye and about 20:25 in the other. I had no complications. Also, I am over 40 and my close up vision was just starting to go. After the LASIK it is much better. I'm told that is not a typical result. My...

ARCHIVED Feedback Needed--class Research; How Common In Large (7+) Families?
bbuster replied to momagn5's topic in Parents, Friends and Loved Ones of Celiacs
1. We first learned that my son had Celiac in 5th grade. No one at the school was familiar with it (neither was I until we started down the diagnosis path a few months earlier). 2. I started with an e-mail to my son's teacher, the principal, asst. principal, special services coordinator, coach and school nurse. I explained a bit about the symptoms... -
ARCHIVED Delayed Growth As A Child
bbuster replied to PeggyV's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My son is almost 13 and is 4'6". He has always been small, mostly less than 3rd percentile. Over the years he has been to an orthopaedist, urologist, and had growth hormone levels checked many times - and everything always came out normal. I am 5'6" and his dad is about 5'10", and he is barely taller than his sister 3 years younger (many of her classmates... -
ARCHIVED American Idol Fans?
bbuster replied to blueeyedmanda's topic in Introduce Yourself / Share Stuff
Obviously Kelly had some "work" done. Didn't you notice how Ryan kept asking her how she spent her money (and he wasn't talking about shoes!) And Sanjaya made it through, as I predicted to my kids, not on his singing performance but on the votes of a lot of young girls who think he is cute! -
ARCHIVED Looking For Tnt Pizza Crust Recipe
bbuster replied to ebrbetty's topic in Gluten-Free Recipes & Cooking Tips
I make this about once per week for the whole family. Usually I double the recipe and make 2-3 extra small crusts and freeze them for future use. Pizza Bette Hagman's recipe 1 1/2 cups pizza flour mix 3 tbsp almond meal or milk powder 1/2 tsp salt 1 packet yeast (2 1/4 tsp) 3/4 cup warm water 2 egg whites 1 1/2 tbsp olive oil 1/2 tsp apple cider... -
ARCHIVED Ideas For Classroom
bbuster replied to hapy4dolphins's topic in Parents, Friends and Loved Ones of Celiacs
My daughter in 3rd grade did a science fair project entitled "Gluten or Not" and won a prize. She gave a little background that gluten comes from wheat, barley, rye and oats. She made chocolate chip cookies with and without gluten, and had everyone in her class sample one of each and see if they could tell which was gluten-free by looking, touching, and... -
Here's an option you might consider: go to website www.benedictinesisters.org and look under "altar breads" and low gluten. They make a low gluten host which is less than .01% gluten, and considering what it weighs, the most it would contain is 37 MICROgrams of gluten - .00037 grams. To put this in perspective, a small breadcrumb has something on the...

I have made this a few times. I use Pamela's Baking Mix, which already has Xanthan gum. I would think you could also use Featherlite or some other flour mix and then add 1 tsp Xanthan gum. This makes one layer - double for a two-layer cake or 9 X 13 (a 9 X 13 takes about 45 - 50 minutes to bake). Also, I just buy the frosting (read labels) but I have...

ARCHIVED Tax Deductable Question
bbuster replied to hapy4dolphins's topic in Coping with Celiac Disease
You can only get a tax deduction for the medical expenses exceeding 7.5% of your AGI. I work for a large corporation with a health care reimbursement account (HCRA), where you can annually put aside non-taxable money into an account to pay for qualified medical expenses. By following the rules of our plan, which follows IRS rules, I am getting reimbursements... -
When visiting my in-laws, a large group of us went there specifically because they had a gluten-free menu. My 12-year old son is the one with Celiac. The gluten-free menu suggested that he eat nothing fried - no tacos, no chips, etc. He does not like chicken, so about the only thing he cared to try was fajitas. They were served with cold corn tortillas...

Not any more! I called the company about 2 years ago and had confirmed that they were gluten-free. My son has been taking them. Then on a recent post someone said Centrum had changed their formula and are no longer gluten free. I checked the Wyeth/Centrun website for the labeling and here is how it starts: INGREDIENTS: Sucrose, Dibasic Calcium...

We have a similar arrangement for my 12-year-old son. Works well most of the time, and the few times that someone forgets, he either just takes wine or gets a blessing. We usually go the the same mass time each week and also sit near the front.

ARCHIVED What Are The Best And I Mean The Best gluten-free Flours
bbuster replied to zachsmom's topic in Gluten-Free Recipes & Cooking Tips
I think gluten-free chocolate chip cookies taste best when you add a couple of tablespoons each of sorghum flour and almond meal to your mix. -
ARCHIVED Pamelas Chocolate Chip Cookies
bbuster replied to elaine33's topic in Gluten-Free Recipes & Cooking Tips
I make chocolate chip cookies from Pamela's Baking mix about every other week, and have never had that problem. I always use real butter instead of margarine, and I usually throw in a tablespoon or so of almond meal. Butter, egg and vanilla are the only liquids. Maybe used too much mix? -
ARCHIVED Told Yesterday That In Ny celiac disease Is Tax Deductable
bbuster replied to norm41's topic in Gluten-Free Foods, Products, Shopping & Medications
It is possible, in theory, to do so, but there are a number of caveats: 1) you can only deduct the increased price of gluten-free foods, which means you have to keep receipts and deduct the cost of "normal" foods 2) you've got to keep meticulous records and have a doctor's letter on file with the IRS 3) realize that this is a big red flag for the IRS to... -
ARCHIVED Any Normal Kiddo Food Out There?
bbuster replied to Noah Mc's topic in Parents, Friends and Loved Ones of Celiacs
I make homemade chocolate chip cookies for my son and he gets 2 every day for his lunch. I use Pamela's Baking mix and the recipe is on the package. All of his friends and my daughter (non-Celiac) and her friends love these cookies. I just make up a batch and only bake 12, then roll the rest into a log and freeze until it's time to make more. I also... -
ARCHIVED Waffles/breakfast
bbuster replied to hannahsue01's topic in Gluten-Free Foods, Products, Shopping & Medications
I make waffles about once a week using Pamela's Baking and Pancake mix. They are excellent. There is a recipe right on the package - you need the mix plus eggs, oil, water and I normally add about a teaspoon of cinnamon. I make these for my son and the whole family and friends, and everyone loves them. You can freeze any leftovers and then just heat... -
ARCHIVED I Need A Really, Really Good Chocolate Cake Recipe
bbuster replied to prinsessa's topic in Gluten-Free Recipes & Cooking Tips
I've made this several times and it is easy and good. From Bette Hagman. I use store-bought frosting (Duncan Hines) Featherlight Chocolate Cake 1 3/4 cup featherlight flour mix 1/2 tsp Xanthan gum 2 cups sugar 3/4 cup cocoa 1 1/2 tsp baking soda 1 1/2 tsp baking powder 1 tsp salt 2 eggs 2 tsp vanilla 1 cup sour cream 1 cup boiling water... -
Pizza was the hardest thing for me to make. I tried at least 8 different recipes and my 12-year old son didn't like any of them. I finally tried Bette Hagman's version and got rave reviews. I make this 2-3 times per month, for the whole family. I also make it for dinner any time my son has a friend spend the night. The best part is you can make extra...

I am brand new to this board and also Catholic. My son (now 12) was diagnosed with Celiac last year. We talked to the priest where he attends school, and also our parish priest about it. Both priests said that if I wanted to supply my own gluten free host, they would have no problem with that. Our parish priest said they could provide the low gluten...
