The reason you are feeling so hungry is because you are no longer eating foods that bloat you up. I had the same problem initially and I realized that I was no longer inflating like a balloon after eating gluten containing foods. If your gut is full of gas, you aren't going to feel hungry. The problem is most likely the fat content of bacon. It's very common to have deficiencies in pancreatic enzymes if you are a Celiac (I do) and this can make digestion of fattier items difficult. Fat will tend to shoot right through you. There are enzymes you can buy to help digest fats and proteins. They really help.
