  6. I have no concerns with this. I have had Udi's bread with absolutely no problems and many, many Celiacs eat this bread with no problem so I doubt there is one. The only thing that would affect antibody levels in a Celiac would be to eat gluten and if this enzyme does not contain gluten, I can't see it being an issue.

  21. Very nicely put and you are absolutely correct! A spouse does not have to go gluten-free just because their wife/husband has Celiac. It's all about respect and if the other person has that and cleans up after themselves, there should not be any problems.   25. There really is no such thing as hidden gluten. This subject has been addressed in many of the books I have read by medical people on Celiac Disease. I eat a lot of chicken and have never seen any brining solutions which contain gluten. I do buy all my meats from Whole Foods so maybe they are the exception but brining solution is plain old salt and sugar...
