  1. Thats a good idea although I dont use sugar in anything these days. ( bad diabetes) The idea of this is great and I will try it the next time I harvest vanilla. One guy here has a machine to juice sugar cane so he's adding this to his coffee. Using fresh liquid sugar juice as a replacement for the white processed stuff should be interesting. ken
  2. Sure wish I could do something about the price -- I bought the farm so it wasnt so expensive! Actually our coop just went up on buying back the processed coffee too. I have not tried vanilla beans in the coffee yet since they cost more than the coffee! take care
  3. Me too so I started flavoring my own coffee -- grand the beans with dried orange peel, Cinnamon stick or roasted mac nuts. Every now and then its nice to do! Ken
  4. Japan is great and has a great program with JET Open Original Shared Link I've had a lot of my students go into it and they all loved the program. Many are still in Japan. Don't know about the Thai programs or Chinese programs. Ken
  5. Dont think Ezekiel makes anything thats gluten free. sprouted and barley will make us sick. Ken
  6. The only coffee you have to worry about is some of the flavored coffees. Pure coffee beans have no gluten nor are processed with wheat. Especially what we grow here in Kona <G> ken
  7. I've used to brands we get in Hawaii with no trouble from either. Can't remember the names but they are from Mexico and brought to the stores here in Hawaii for the field workers. Some of the other Mexican brands of corn tortillas are really good too. Maybe you can find a hispanic grocery in your town. Ken

  10. I never had any problem with the flours although I'm somewhat paranoid about some being mixed. Especially true for buckwheat sold in North America -- its often only 30 to 60% buckwheat or soba and the rest is regular wheat. I've also seen some potato starch mixed with wheat starch so I look for specific types usually from Japan or Thailand rather than...

  14. I cant walk into a pizza place or bakery without getting sick. For me and some others, breathing the flour can be worse than ingesting it. I would keep pushing your college doc to do more tests though. good luck ken

  16. They have the cards that explain things in many languages. WHy not print something out ahead of time in English that you can give to the wait staff. This might save some time and if your shy around attractive waitresses it will help them to better understand your needs.

  21. My doc in Japan is Takeshi Imai who uses the name steve. he is in South Yokohama and a great guy. Been friends for more than 20 years.   22. Just back to Hawaii after working more than a month in India where lentil's and lentil flour is very common. With diabetes I could not have as much of it as I would have liked but it does work in many culinary applications where wheat has been used. Millet and garbonzo flour as well.   25. The ragi is really good but at 72% carbs, its not something I'm going to have unless they have a cure for diabetes! The chef I know in Banagalore was making roti for me with it but I soon asked him to switch to channa (garbonzo) since the carbs are far less than the ragi.
