In my opinion you need to locate a new GI. Your blood tests specifically for celiac will come back negative because you have been gluten free. The only reason to have additonal tests is to diagnose another problem. Hope your feel better.

Helena, another option for making meals with meat is to premake the meals at home. Meal suggestions are spegetti sauce with meat, chili with meat or beef stew. I freeze them is the serving sizes I expect to need an put them in the ice chest. -
I have watched In-n-Out cook there fries. Whole potatoes go into the potato slicer and straight into the dedicated deep frier. These are my favorite french fries.

I agree with mamaw the RV is the way to go if you go out a lot. We have never gotten an RV because we would only use it one week a year. You could also look at renting an RV. -

Look on rvtrader.com if you are going to look for a used trailer or RV. If you don't want an RV consider staying in a renting a place with a kitchen. Celiac is considered a disability under the American Disabilities act. With proper medical documentation she may qualify for support from the university disability office. If you know where you will be staying you might consider mailing food to one or more of the hotels in advance before you leave. You would need to contact the hotels first to see if they are willing to accept and hold the package. Have a great trip. -

Is it possible that you were sick while at home during the college break due to cross contamination? Another possibility is that you were infected by something like a stomach virus. If this is like the Ready Pac Grand Parisian I buy from Costco the dressing and salad toppings come in sealed bags. I have not checked out the dressing or toppings as to there gluten free status. I'm with kbtoyssni, I just bring in my food in a place where I don't think I can eat. I make sure the food is not something that needs to be reheated. Sometimes this is a full meal or a partial meal to supplement what I am able to order off the menu. I will order a drink. Also, in time eating different food will not bother you. -
