My first gluten-free stuffing was with Ener-G. I didn't like it but then I don't like stuffing. Daughter didn't like it either and she was the one who needed gluten-free. Everybody else seemed to like it but there was a lot of leftover. -
I've noticed similar things with nuts from Costco but not necessarily in the shell.

I am no expert and my allergies are the IGg type. I also do not need to be gluten-free, so no villi damage. However, I do know the type of reactions I get from the allergens. Eggs would rival on the surface the same sort of symptoms a celiac would get from eating gluten. So I would never risk eating them. Dairy used to give me ear and sinus infections... -

Daughter was allergic to dairy and eggs. I was allergic to dairy. We outgrew those things. Now we can eat them, but we were told to have them no more than twice a week and not on subsequent days. I tried making my own bread both from scratch and from mixes. I quit doing that. Why? Mostly they didn't work. I should add that we are dairy and egg free as well. I don't have celiac but I do have multiple food allergies, diabetes and gastroparesis. That means my food choices are limited. It bugs me when people go out of their way to make something or buy something they think I can eat. Most of the time I can not. Then it bugs me further when they insist that I just try it. -

You really do have to be careful of the cross contamination. Sometimes my daughter has insisted on eating something that says "May contain..." In her case it is more than just wheat. Sounds like you could have diabetes or pre-diabetes. Mid 70's certainly can be a hypo. Keep in mind that those meters have an percentage of error. Depending on the source, a hypo can be anywhere from 65 to 70. You can also have symptoms of hypo when you have a quick drop in blood sugar. You would do best to eat more slower acting carbs like dried... -
